寫楽 Junmai Ginjyo Nagoshizake - One time heating When we think of 寫楽, the overall image is one of sweetness. If you think so... The sweetness is definitely present in the aroma. But it is mild and refreshingly fruity. Even when you drink it, the sweetness is still mild. It has a matured feeling. The umami is strong. Bitterness that can be felt afterwards. And it's really delicious with a nice sharpness. And then I thought about the heated Bizen Omachi sake we had the other day. This was also... So I warmed it up to lukewarm. It has a warm and gentle aroma. It has a deeper umami, matured and sweeter taste than cold sake. Maybe it's better warmed... I'll try raising the temperature a little more today 😆.

Hanamup Junmai Daiginjo Yamadanishiki The aroma is as one would expect from Hanamup. It is gorgeous, elegant, and voluminous. It has a pineapple-like aroma. There are not many HANA-UP bottles that come in a four-pack. It has a rich sweetness and umami. I can't get enough of the way it passes through my nose 😍. I can't tell you how many times I've had a glass of this 🥰. It's a delicious and sharp sake that you won't get tired of drinking 😆.

Otters Junmai Junmai Daiginjo, Polishing 30% to 99%, Tankoba kumi-Unfiltered Fresh, green apple-like aroma Fresh and gassy. It is very lively 👍. Sweet and full of flavor. It's full of volume and rich in flavor. The bitterness that comes later is also good 🥰. This is the third time I've had it last spring/fall and again this spring. I'm sure I'll be back for more 🥰.

AKABU SPARKLING GARAXY It may not look like sake... The cap looks like beer. The bottle is opened with caution. Carefully opened the bottle. It spurted a little, but I managed... Continuing on from yesterday, a comparison of 寫楽 drinks. Bizen Omachi. From the feeling I had yesterday, I wondered if it could be heated 🤔.... I thought 🤔.... I tried heating it up. Heating up 寫楽. It takes courage lol. The aroma is like heated rice with a sense of fullness 🌾. It's not fruity, but more of a rice-like umami. It shows a totally different expression. And cold. The same gentle and elegant aroma. The sweetness and umami are both strong. The bitterness in the aftertaste may have subsided a bit.

Keiraku Junmai Ginjo Bizen Omachi Gentle, elegant and refreshing aroma. Slight and gentle sweetness. Good mouthfeel. Moderate umami. Bitterness that can be felt afterwards. It is a good balance and really tasty, though it seems to be in contrast to Akaban Omachi.

Today is dawn. Regular hospital visit after work. As a result, I thought I could afford to be careful opening the bottle since it's my second bottle... As soon as I opened the bottle, the bottle almost popped and all the bubbles came out at once 💦. I desperately tried to hold it back until it subsided. Juicy aroma with a hint of sourness. Mild aroma. Low alcohol at 8%. Sweet, juicy and citrusy. The aftertaste is clean. I still like it.

Today's dinner drink is 🍶. Limited sale by reservation only. Kojin Kuheiji Usu Nigori Yamadanishiki from Kurodanosho Aroma is like a fine gas and a little acidic with a clean, luscious flavor 😍. Sweet, acidic, fresh, and full-bodied. The bitterness that follows afterwards is also nice 🤗. Two four-packs this year. I wanted to taste it after a while. ☝️

Continued from yesterday Koshi Junmai Daiginjyo Nao Kumi Nama Nama Sake Yesterday, it was so delicious that I repeatedly sipped it. Today... Of course it's umamatto 🥰. The same gorgeous apple-like aroma 🍎. Even after leaving the bottle open overnight, the gasiness and sweetness and umami are still there. It's really delicious!

Light and not too sweet. It's good to try it warmed up (I haven't had it that much...) and feel the aroma as you drink it. I think it's better when it's heated up. I think it's possible to drink it warmed.

Tazake Junmai Ginjo Yamahai The aroma is fruity with a refreshing acidity. When you drink it, you can feel the sweetness with a sense of maturity rather than sourness. I had an image that Yamahai was sour, but it's not at all 😆. There is a slight bitterness afterwards. It is well-balanced and easy to drink without making you feel like it's 16 degrees Celsius 🥰.
