It has a strong umami flavor, which is typical of autumn-aged sake, but it has a dry taste without a sense of maturity. It seems to go well with pickles.
It is so hot that it is hard to believe it is freshly squeezed. There is also a slight sourness. Seems to go well with onigiri (rice balls). It did not go well with scallops.
Highly recommended! Fresh and crisp aroma like a new sake, but the acidity is not too strong and the umami is also tasty. Goes well with edamame (green soybeans).
