At home. Sake tasting party with friends after a long time. We brought our own sake. First up was a local sake from Echigo-Yuzawa, a gem bearing the name of the first head of the Shirataki Sake Brewery. The aroma is gorgeous, and in the mouth you can taste the acidity and umami, with a slight lingering alcohol taste. It leaves a slightly bitter or rough feeling in the back of the throat. The Shirotaki Shuzo is known for its Kouzen Nyosui, which has a fuller aroma and taste compared to the Kouzen Nyosui. The bottle was also unusual, with an innovative volume of 630 ml. This is the first brand I've seen and the taste is great. ‼️

Shirotaki sake from Echigo-Yuzawa's "Shirotaki" and "Kamizen Josui" breweries. Minatoya Tousuke is the name of the founder. It has been quite a while. Junmai Daiginjo with 50% polishing. It has a peachy, elegant aroma and a smooth mouthfeel👍.

The last of the Ohigan parties was the first Kamizenjosui in a long time. I had an image of a more Showa-esque sake, but to my surprise, it really looked like water. It went well with a wide range of foods such as sashimi and Costco high rollers. In other words, it doesn't get in the way. It made me rethink my opinion a little bit. I think I need to update my taste buds by choosing something that doesn't look like a local sake sometimes.

I had a motsu nabe set meal and a beer, followed by a glass of Takashimizu. This Takashimizu is not like Rokugo-yeast. It was refreshing, but had a rice-like flavor. Good night.

I went to Penguin Village, which I had always been curious about. The sign says Kikusui, but I was surprised to find a variety of good sake! The food is delicious and reasonably priced!
