It is "Iginjunsei" (酏吟純聖) Yamahai-brewed Junmai Ginjo by Mifuyu Shuzo. This junmai ginjo is made from Shiga Prefecture's Yamadanishiki rice polished to 55% and fermented at low temperatures using the Yamahai method. You can taste the unique acidity and robustness unique to Yamahai. It is also a great sake that can be served lukewarm. Tomiikiku's local sake ministry️ popular at Haneya. This sake is available in supermarkets😊. The traditional method of production is the same as that of Haneya. Different tastes with different vectors 😋. This sake is characterized by sweetness and umami, not dryness. The common feature is a powdery taste like Kamishinko. It's not always available and not always cheap. I've been through it all along😅lol

The third drink outside is Honkin😆. Dry Taichi Clear and dry, with a hint of sweetness and bitterness. It was perfect as a sake for a meal with a nice sharp taste.

Honkin Normal Sake Yellow Label 1,800ml Alcohol added sake, koji rice 60%, kake rice 70%. This was purchased when we tasted it at the brewery last November. After six months had passed, the umami flavor seemed to have taken over. I think it was more smooth when it was first shipped. It was stored in a hallway with a refrigerator pan, so we will enjoy it before it gets too hot. I think I like it better when it returns to room temperature than when it is cold.

Suehiro Shuzo's Genzai. They also won a gold medal at the New Sake Competition for their Genzai daiginjo, but this is not that award-winning sake, but an affordable special junmai. It starts off with a piquant and refreshing sweet and sour taste! The taste is powerful with a strong sense of presence, but the alcohol content of 15 degrees makes it easy to drink and enjoy 👌. We are looking forward to adding this sake to our lineup next year and beyond 😊.

Sake brewed at Suehiro Shuzo's Kaei warehouse. When I hear the name "Genzai," I think of the daiginjo that was entered in the sake competition. I hesitate to buy it because it is a bit expensive, but this special junmai sake (nama-shu, hi-iru) is reasonably priced and easy to pick up. I am looking forward to the next year, when there will be more varieties of sake. As for the sake, the aroma is like apples. When I drank it, I smelled cemedine😅. The sake is fresh and has a tangy, gaseous taste. The sweetness is moderate and the acidity is strong. I thought maybe I don't like cemedine, but I drank more than half of it in no time and regretted it. It is easy to drink. The second day, the cemedine is also good. If this is the case, it's a special pure Cemedine.

The pear 🍐-like aroma, slight fizziness, sweet and fruity attack, and pleasant bitterness in the aftertaste, the Machida Brewery's characteristics are still intact. It has a gorgeous taste, and I don't have the palate to comment on the differences from the Machida Brewery in my memory😅. If I were to pair it with a meal, I think it would be better with something well seasoned, like fried food or sweet and spicy simmered dishes 😊. ...so I guess it would go well with katsu-ni (pork cutlet stew) 😋...

Tonight, we have a little quirky one for you 💁. Mitsurensei 15th Anniversary Special Sake 5 Years Aged Shiga Watabune Rokugou ✨ H29BY=2017BY and from 2022.7 when shipped, it's aged 5 years, but it's now aged 6 years with +1 year in our house😅. I'll try it as an after-dinner drink after dinner 🍶. It's colorless and clear when you pour it into the cup. The aroma is completely old and matured, with hints of dried grapes, brandy, chocolate, and cacao...it's just mellow. The taste is also bitter with bitter chocolate sweetness, followed by alcohol 😋. Six years of aging is no joke 😎.

I will drop a second one this evening. This is the second of the three stars limited edition extravaganza✨ This time it's the Arcburg strain, reprint yellow yeast. The aroma is not flashy at all, it's a traditional sake with a graininess and beaniness, but the taste is a complete turnaround, with bitterness and sourness from biting the peel of citrus fruits, and it's quite dry with the alcohol running down the nose, perfect for a mealtime sake 😋. The dryness of the reissued yellow malted rice is not a date: ‼️

Purchased at Yamasho in JR Ashiya station. I mentioned before that this liquor store is based in northern Kyoto and has a wide selection of sake from the Tango area, but they also have Kumi no Ura. It is rather sweet. Muscat and lychee-like flavor. It is fire-brewed but fresh. I'd like to try some of their fresh sake. I'm sure it would be delicious. According to the internet, it's unfiltered raw sake. It's true that it's on the lees for a fire-brewed sake. Sediment is noticeable.
