The restaurant does not seem to be a sake store, but the lineup always draws me in. This time, I ordered "SENKOURI" and this was the sake I ordered. Fresh! But almost no acidity. Bouken-san told me about it before, and I've become a fan of Watashibune's new sake 😚. But it's made with 100% short-stemmed Watashibune. I think this brand is as good as my favorite Genmai which I opened just before. The aroma is like a grape🍇, and in the mouth you can feel a very thin gas and a gentle sweetness. The aroma and taste are well integrated, and the transparent flavor fades out with a slight bitterness, which is brilliant 😆. Today I paired it with a yose-nabe with agaric broth, and the complex broth of the seafood and the flavor of this sake matched so strangely that I could really linger and eat and drink forever... It's still Monday, so I had to call it quits 😅.

Sake Day I wanted to open something from the fridge😅. I've never heard of this sake before but I've been curious about it since Mariponnu's check-in 😊. First Koimari! This time I found this one on sale at the drugstore! My favorite Shizenigo! I was intrigued by the word "dry" and bought it. The aroma is apple-like, which is typical of Shizenigo. It has a fruity aroma even though it is a honjozo. The sweetness is moderate, and the bitter sourness comes through with a nice crispness. It is perfect as a mid-meal sake. It is a sake that accompanies and does not interfere with meals. I was impressed that such a sake is sold at drugstores! I realized once again the high level of Fukushima sake.

The last sake I purchased on my GW Niigata trip. I opened Hishiko. As stated on the label, it had a mellow sweet sake quality that brought out the aroma of the yeast, the umami of the rice, and a beautiful sweetness. It has a clean aftertaste, making it an excellent choice as a mealtime sake. I would like to try it again on my wonderful trip to Niigata.

The impression is gentle. The third day. It tastes better when it has been open for a while. After the light fruitiness, the water is a little sour, a little bitter, and clean. Nagano sake is delicious 🍶, and my favorite Shinshu Kamerei and Hitogokochi are my favorites. .... Fruity aroma, sweetness of rice, good bitterness in the aftertaste, and a nice sharpness! Nothing to say about it, roast pork and local edamame (edamame is in season) to go with it. .... Next time, I'd like to pair it with Shinshu soba noodles...

I can't believe that rice can be expressed like this 😋 It's really delicious 😋 Anyway, it's .... There is no bitterness! I wonder if it's buckwheat noodles since it's a Shinshu sake (....)
