Long time no see Kobe 🚃. The hills are amazing😅. I stopped by Sannomiya Hankyu and bought some Nada sake 🍶. The label looked good, so I chose Amber Izumi Jungin. It is a clear, fruity, dry sake. It is mildly sharp. It's a beautiful sake, easy to drink without any peculiarities 😋♪ I'm glad I bought it👍 I'm looking forward to enjoying more of Nada as there are so many unknown sakes 😙.

Yesterday we went to Bicchu Matsuyama and Kibi Tsu! We were worried about rain, but it was really fortuitous that it shifted and we saw some sunshine. The view over the magnificent stone walls and town at the top of the mountain was exceptional ✨. Then we visited the Kibitsu Shrine, with its long corridor and historic appearance. The long corridor and historic appearance of the Kibitsu Shrine that we visited afterwards was truly heartwarming 🍑. After exploring, we crossed the Seto Inland Sea and drank a glass of Kibi-shu 🍶. When you open the bottle, you will find a deep aroma of nuts and chestnuts. The mouthfeel is slippery and dry. It is full-bodied with a punch of acidity and astringency, as well as a full-bodied rice flavor. It has a presence like nuts and bitter chocolate. However, the stimulation of the hot, acidic, and astringent taste tightens it up like a whip, and it has a good salty taste with a firm edge!

It's more of a drink to enjoy on its own than a midday drink... it's a beginner's drink... women will love it... and since it's unfiltered, it's unfiltered, you can drink it on the rocks with ice... yup!

We ordered at Benkei no weibasho, an izakaya near Niigata Station. This restaurant is operated by a local conveyor-belt sushi chain, and we were informed that their seafood dishes are sure to be good, so we made a reservation and visited. I was curious about this sake at Ponshukan, where I had wandered around during lunch. Niigata is known for its dry sake, but this one is quite fruity. It is not too sweet, so it goes well with sashimi. I mean, too much throat groyne!

Itzumi Shuzo is the smallest brewery on Sado Island. This brewery is famous for Itsuki, which was introduced by V6's Sakamoto, but Itsuki was sold out, so I bought this one. The color of the sake is a little bit dark, and the taste is very strong at 17%. It has the umami taste and aftertaste typical of Yamahai, and it is delicious, but it is very strong. Be careful not to drink too much. The person who explained the brewery to me was very simple and did not try to sell me anything in a good way. He explained that he was sorry for the lack of sake and that this was the only sake available, which was a very favorable impression. I will support this brewery!

Yahiko Sake Brewery in Yahiko Village, Niigata Prefecture. The main brand was "Echino Hakusetsu," but it appears that "Yahiko" will be the main brand from now on. This Junmai Ginjo is also made from Yamadanishiki produced in Yahiko Village, and is a good sake, not fruity, but calm and soft. Yahiko Village is where my mother is from, and I spent a lot of time there as a child when I was sent to my mother's home, so it is like a second home to me. Yahiko Shrine, the first shrine in Echigo, is located there.

Yahiko's regular sake, Aozae, by Yahiko Shuzo Sake rice is Koshibuki produced in Yahiko village. Aozae has a refreshing, watery quality. Aozae is a perfect evening sake without any peculiarities. Yahiko Shrine is the largest shrine in Echigo Province. It has a very beautiful structure with a disappearing aftertaste. A good sake for stand-alone drinking. I think it would also work well as a heated sake, perhaps because of the image of Ikumichii 👌.
