There are only two sake rice study groups left. I've been posting them chippy-chippy, so my notes and my memory are no longer connected. But there is no doubt that they were delicious. The ninth bottle was Kami no Ho from Mie Prefecture. The first bottle was a Saku no Kami no Hoho, which got me hooked on sake rice, but it tasted completely different. The aroma is banana, I guess. It has a slightly sweet taste with a refreshing dryness from the microbubbles. It goes on and on... a never-ending type of sake. The next post should be the last in this study of sake rice.

Special Junmai Nigori Nama-zake🍶Kami-no-ho🌾 from Mie Prefecture. Seme smell, fresh✨, a little schwag. Sour and spicy. Mustardy 🙄 according to my wife. When paired with the koji-marinated squid (🦑), it takes the edge off and cozies up to you. The power of koji is amazing 😆. Looks like a new brand to be born in spring 2023. ☆☆☆☆☆ It has sourness and a little bit of miscellaneous taste or bitterness, then comes the sweetness or umami of nigori. It has a bitter, youthful taste that goes well with spring wild vegetables. The sweetness that comes afterwards is also youthful.

It is Junmai with Kiwi-derived yeast by Jozen. It is a delicious, refreshing sake with a slight sweetness and dry acidity. It does not interfere with meals.

This Sake has a lovely aroma of apples. The mouth feel is soft and smooth with a bit of acidity at the finish. There are flavors of apple and grape with a hint of pine wood at the finish.

A single-bottle of ginjo fresh-stored sake from a brewery in Higashinada (Narumi). Very pleasant sake quality. It's the season of hydrangea👍.

The rice used is Yamadanishiki from the Sato Plantation in Sosa City. It is said to be free of chemical fertilizers and synthetic agricultural chemicals. The sweetness is moderate. The acidity is citrusy with a crisp, bitter taste. Overall, it is a refreshing summer sake. It is well-balanced and can be drunk easily. The yeast seems to be different from last year's, and judging from the other reviews, it may be a different one. (It's also possible that my taste buds are wrong...) If that's the case, I look forward to it every year! This year's was my favorite type❣️.

When it gets cold, I want to drink hot sake. Speaking of hot sake, I also like sweet sake, so up until now I had been drinking brewed sake from Ofuku. Koikawa Shuzo Junmai Ginjo Kamejikohi 720ml Rice ： 100% Kame-no-o produced in Yamagata Prefecture Rice polishing ratio : 55 Alcohol : 15.3 My wife entered this sake in a CS historical drama program and won it. It is said that this sake brewery is related to the writer Shuhei Fujisawa. This is also some kind of fate. Now, what does it taste like? It is quite classical. My wife said it was just fine. It is best to warm it up a little.

As the name suggests, it is sweet. Sake by itself is too sweet. So, when I tried it with soda, which the brewer also recommends, I could feel the acidity behind the moderate sweetness, and it became a completely different drink. This is a new kind of sake highball that can be drunk with gusto. I don't want to have a medical checkup tomorrow.

Morinori's Nama Sake. I think the sake here tastes better on draft than on fire-roasted. It has a fairly vigorous effervescence and a strong cloudiness. The aroma is pineapple, sweet aroma of koji and lactic acidity. Refreshing. There is a slight shwash, mainly sweetness and acidity, but there is also a mineral-like backbone. There is a bitter aftertaste. The image is a little different. Minerality in the back end? The bitterness is not good. I thought it was good when I drank it before, but maybe it's the way it's chilled?
