Hyogo is the sake of Himeji City. There are still many sake that I do not know. It is deep~~! It is said to be a mellow dry junmai sake. Ikebukuro with friends on Wednesday. It was not an all-you-can-drink party. Sake was my friend's choice as we sunk into the sake swamp. It was my first Hakuba Nishiki. Nice choice. It tasted like it would be ranked high in the Nigorin picks. It was fresh, fruity, sweet and refreshing. The upper half of the label is European and the lower half is Japanese, which gives it a Showa-era feel.

Shikoku x Sake Country 2025 Sake Brewery Wonderland On Osaka⑤. The booth of "Kaze no Sato" in Ehime. After suffering tremendous damage from the torrential rains in western Japan in 2018, the brewery decided to revive itself with the support of local people, fellow members of the sake brewers association, and volunteers. The brewery has recovered through crowdfunding and other means, and this one is also not to be found in the Kansai region. Junmai ◉ Junmai The aroma is a bit peculiar. It may be an off-flavor. The flavor is firm and a bit nutty. They say it is recommended to be heated. Junmai Ginjo Not too much sweetness and umami, but a mild acidity. Junmai Daiginjo Uzu The aroma is a little subdued, and the sweetness and umami are refreshing, the type of sake that goes well with river fish. Junmai Ginjo-shu Sakurahime A junmai ginjo-shu brewed with Sakurahime yeast. It has a clear, sweet and umami taste with a clean and refreshing aftertaste. When I told him that Sakurahime yeast is not cherry blossom, he said yes, it is a flower called delphinium. Rice flavor and a bit of fruitiness. The taste itself is nice, but there is something strange about it... Kaze no Sato Junmai Ginjo Shizuku Ehime, Polishing ratio 50%, EK-3 yeast, Sake meter value +6 A juicy sake with a firm sweetness. A little pineapple 🍍. The most delicious 😋. Junmai Daiginjo Usu Yamadanishiki, Polishing ratio 40%, EK-1 yeast, Sake meter value +8 It was refreshing and gorgeous, but delicious! It had a berry-like flavor. All of the breweries here have high sake strength, but it didn't feel too spicy. ☀️ This is the first brand of sake from Ehime. There are glimpses of rice floating around 🌾. The ori is sturdy and doesn't seem to dissolve fully🤔. There is no sweetness and the rice flavor is more pronounced 🌾🌾🌾🌾🌾🌾. In addition to the nigori, the rice is dissolved to the point of being sludgy, but thanks to the microcarbonation, it passes down the throat better🫧🫧🫧🫧🫧. This sake is brewed by Umeshiki Yamakawa, a subsidiary of the major sake maker Hakutsuru Shuzo. In recent years, Hakutsuru Shuzo has purchased a number of breweries from across Japan. The Aomori-based brewer Momokawa, which uses Hakutsuru Nishiki, is also a subsidiary company of Hakutsuru Shuzo. Not much of an aroma, slight whiff of alcohol. Dry, watery and clean on the palate, with little umami and a slight alu taste. After drinking it, it has a light throat feeling with a faint sweetness. It is a standard shokuchu sake. For the snacks, we had stewed kalbi and root vegetables, mussel pickled in soy sauce, chili bonito sakutome, and baby star ramen with the flavor of kondashi. It goes best with sakabuto, which enhances its sweetness.

When I drank it, I found it to be a strong style of traditional sake 😚 with a good balance of flavor, sweetness, and bitterness, and it was thick 🥰It was like an all-purpose sake 🤤.
