Shikoku x Sake Country 2025 Sake Brewery Wonderland On Osaka⑤. The booth of "Kaze no Sato" in Ehime. After suffering tremendous damage from the torrential rains in western Japan in 2018, the brewery decided to revive itself with the support of local people, fellow members of the sake brewers association, and volunteers. The brewery has recovered through crowdfunding and other means, and this one is also not to be found in the Kansai region. Junmai ◉ Junmai The aroma is a bit peculiar. It may be an off-flavor. The flavor is firm and a bit nutty. They say it is recommended to be heated. Junmai Ginjo Not too much sweetness and umami, but a mild acidity. Junmai Daiginjo Uzu The aroma is a little subdued, and the sweetness and umami are refreshing, the type of sake that goes well with river fish. Junmai Ginjo-shu Sakurahime A junmai ginjo-shu brewed with Sakurahime yeast. It has a clear, sweet and umami taste with a clean and refreshing aftertaste. When I told him that Sakurahime yeast is not cherry blossom, he said yes, it is a flower called delphinium. ☀️ This is the first brand of sake from Ehime. There are glimpses of rice floating around 🌾. The ori is sturdy and doesn't seem to dissolve fully🤔. There is no sweetness and the rice flavor is more pronounced 🌾🌾🌾🌾🌾🌾. Ikebukuro with friends on Wednesday. It was not an all-you-can-drink party. Sake was my friend's choice as we sunk into the sake swamp. It was my first Hakuba Nishiki. Nice choice. It tasted like it would be ranked high in the Nigorin picks. It was fresh, fruity, sweet and refreshing. The upper half of the label is European and the lower half is Japanese, which gives it a Showa-era feel.

This sake is brewed by Umeshiki Yamakawa, a subsidiary of the major sake maker Hakutsuru Shuzo. In recent years, Hakutsuru Shuzo has purchased a number of breweries from across Japan. The Aomori-based brewer Momokawa, which uses Hakutsuru Nishiki, is also a subsidiary company of Hakutsuru Shuzo. Not much of an aroma, slight whiff of alcohol. Dry, watery and clean on the palate, with little umami and a slight alu taste. After drinking it, it has a light throat feeling with a faint sweetness. It is a standard shokuchu sake. For the snacks, we had stewed kalbi and root vegetables, mussel pickled in soy sauce, chili bonito sakutome, and baby star ramen with the flavor of kondashi. It goes best with sakabuto, which enhances its sweetness.

Today we are going out for a drink. This izakaya is a rare izakaya where you can eat a lot of vegetables 😁The sashimi is also reasonably priced with sea bream and swordfish. They sell vegetables, so they have a large selection of vegetable-based soft drinks. They mainly have local Shizuoka sake, but they also have a lot of Omuraya sake from the famous Omuraya brewery, which is famous for Wakatake and Onna no Nyokase 🧐 This is the first time I've had anything from this brewery. Today's sake was Oni Otome. I was in the mood for a sweet sake. The flavor was full and spreading. It is delicious 😋. We had it with sashimi, tempura, and meat rolls!

Second bottle of Rakurakutsuru. It is a brewed sake with a very high degree of alcohol (19-20 💦). I bought a small bottle because I wasn't sure, but I might as well have bought a big one. The regular size was a square bottle, which is an unusual shape for sake. I think it is best to drink it on the rocks, but you can also drink it straight, but I'm afraid of the aftertaste 😁. There are similar types of sake such as ice breaker, but I think it has a clear taste in comparison. I recommend it for summer👍

Went out to eat Izushi soba with my family👍. After dinner, we stopped by a nearby sake brewery. I often visit Izushi, but this was my first time to visit this brewery. I think this is probably the only junmai I've ever had. I recommend this sake at room temperature👍. Cold sake has an overly pronounced acidity, but it can be drunk neatly. At room temperature, the sweetness is more easily felt and the overall balance is better. In addition, I drank it hot and felt the spiciness strongly, but it was very smooth.
