Rice used is unknown There is a bunch! It has a very "Yamahaku" feeling. The sense of maturity is also there. The taste is dry, but the sweetness is spreading on the tongue. The sharpness is not bad either. As the temperature rises, it becomes milder. This type of sake tastes better when it is not too cold.

The sake is from Shingu, Kii Prefecture. The slightly acidic taste was overwhelmed by a complex and exotic flavor. It was so delicious that it may be my favorite sake among all the Yamahai sake I have ever had.

Purchased at a liquor store in Nakazaki-cho after an event at Ogimachi Park with Nemuchi The design looks like something you'd find in a bottle at an izakaya 😅. Normally I wouldn't pass it up, but I thought it looked unusual and bought it. It's been a year since it was made, but I don't feel it's aged too long. It is light, refreshing and easy to drink.

Type: junmai daiginjo, rice polishing rate: 50%, alc.: 16% Floral aroma, vanilla, marshmallow and a little bit of savoury aroma. Flavor feels dry with sharp acidity and bitterness of alcohol. Earthy flavor lingers for a while. Not too good not too bad. Decent price here in Europe.
Drinks consumed at the lunch buffet I had the impression that it had been available in all restaurants for a long time. The taste was "safe". Low alcohol content, no peculiarities Good for lunchtime drinking.

I bought this brand together with Ken-Aizan because I had not yet had any of Kangiku's other brands. The flavor is not as impressive as Ken-Aizan, but it is an honest and tasty type of sake. I like Kangiku's sake as a whole, and I always find a good flavor in a modest way.

The sake is of 90% polishing ratio. A very bubbly sake with fragrance of white flower, white peach and apple. The texture is light, with flavours of grapes and pear, also tasted sour. Not much umami but it gets more alcoholic flavor when it gets warmer. Best if drink chilled.
In the fall of 2023, I ordered Ken Aizan, and for one reason or another, when I first tasted it a year later, I was surprised by its flavor and taste. When I learned last month that Ken-Aizan was being shipped again, I immediately pre-ordered. Once again, the flavors are wonderfully complex, the body is very well balanced, the bubbles are subdued, and it is an excellent match for meat dishes and curries. Considering the price and difficulty of obtaining this sake, I believe it is not at all inferior to Sansho's Kako and will certainly be a repeat purchase.

Today, I went shopping at Naritasan Shinsho-ji Temple. And by the way? I thought I'd buy some sake. Chomei-sen! The name is good luck! I had no choice but to buy it. I thought, "I have no choice but to buy it! I want to cherish my good luck! I took it home and opened the bottle, thinking I would drink it as it was cold there. No blowout. First, the supernatant. I could feel some acidity. After that, I stirred it well, poured it into a glass, and drank it! It is sweet! As soon as you think that, it goes from dry to sharp. And then the four-pack was gone.

My junior from Hokkaido bought some sake as a souvenir and we drank it at home together. It seems to be stored in the snow. The sake is light and dry. It goes well with any kind of food. We had yakitori and hormone today. The sake and the snack are delicious, and the talk is fun. The best.

It is a local sake, but I drank it for the first time. It had a soft mouthfeel, followed by a bitter taste and a nice sharpness. I learned from the label that it is called "Osaki. According to the explanation by the brewery, this sake is made by growing Miyamanishiki, Aikoku, and Hiyori rice in the company's own rice fields in Osaki, which is undergoing reconstruction.

Purchased at a liquor store in front of Yume Town in Onga Town Clear and colorless Ginjo aroma similar to apple Full-bodied with a refreshing sourness on the palate A little taste of rice The richness lingers in the mouth for a while. The taste gradually wears off and the aftertaste is very refreshing. Immediately after taking it out of the refrigerator, the gorgeous flavor is a little difficult to match with food. It is better to warm it up a little to make it easier to pair with snacks. To be served hot The aroma has a savory flavor similar to that of corn. The flavor is not as gorgeous, but it has a broader taste and a crisp, clean taste. Unlike cold sake, it enhances the taste of side dishes such as tuna tataki. Surprisingly, heated sake is also good.

Lid is stiff. Thin lactic acidity, slightly sweet fruit-like smell. Lemon and plum-like acidity emerges from the thin rice mouthfeel, finishing with rice-like flavor acidity and a hint of sweetness. Delicious. It is refreshing and easy to drink. The lower the temperature, the more refreshing it is.

I got a bottle of UO from Uozu Sake Brewery, which is now under the umbrella of Sake Capital 😀. It seems to be a sake developed to go well with fish from Toyama Bay ✨. The aroma is mild 😄and the palate is smooth, fresh, and light 🤔, and it finishes with a refreshing acidity 😚I couldn't really tell the difference between it and the Hohanami 🤣 but it was a delicious sake 🥳.

A liquor designed to go with cheese, with a view to exporting to Italy. Aroma is mild Slightly milky On the palate, banana flavor with a light sweetness, alcohol taste, and a bitter aftertaste The mouthfeel is sour and greenish, but it settles down as the day goes by. Pairing with cheese It is said to be designed to go well with blue cheese, but for common people, snow brand 6-pack cheese is fine! The sweetness of the sake matches the rich saltiness of the cheese. The slight sourness also accentuates the taste, which is interesting!
