Rice used: Sasanishiki, Dewa Kirari, and Miyamanishiki grown in Yamagata Prefecture. I found this in a grab bag at a liquor store in my neighborhood, which has become a regular feature for me. It's not a great deal in terms of price, but I look forward to it because it contains brands that I don't usually buy. This one has the sourness that is typical of a traditional sake brewery, but when you drink it lightly, it is refreshing, and as you continue to drink it, the sweetness comes slowly. As the day goes by, the sweetness will increase even more. The sharpness is not that great, but it is not overpowering either, making it a good all-around sake. The price is less than 1,000 yen without tax, but I️ think it's quite competent.

It even came out to Junmai Daiginjo, but it is clear, dry, and watery. Even though it is a daiginjo, it is not sweet. Is this a taste peculiar to this rice? Anyway, it is not what you would expect from a daiginjo, but as it says on the back, it can be drunk like a clear white wine. It was more fresh than fruity.

This is also our first time to visit this brewery. I'm glad to see that they have a lot of unpasteurized sake. I completely forgot about the bad things at work and went into drinking mode. Just like the label on the back, this sake has a lot of flavor, but it's not heavy. Even though it was nigori, it didn't feel sloppy. It was an easy to drink sake.

The third group of the Sake Rice and Yeast Association is Gintome and Yuko's Idea from Iwate Prefecture. Iwate is often named after the pure-heartedness of the Tohoku region or after Kenji Miyazawa, and the rice is Gintome, which is a Gin user. Yuko, the yeast, seems to be named after the developer, Ms. Yuko Yamashita of the Iwate Prefectural Industrial Technology Center. It is a clear, dry sake. Sake from Iwate is interesting in many ways. (ますますます +. We had Takasago from Kiyamasa Shuzo 😀. It was completely different from Jikan. I'm not sure if I'd drink it with refrigeration, or if the aroma would be milder. No? I'm not sure if it's too acidic or not when I drink it 🤔. I didn't like it, so I heated it up and it turned into a different kind of sake. I found the heated Takasago to be delicious 😀. Now Igarashi Sake Brewery is complete 😝. It's not a draft sake, but it needs to be refrigerated, but it's delicious warmed up too ❓❓❓❓ but I can't drink heated sake on this hot day, so I'll drink it chilled to a crisp. ✌️ The aroma is mild but apple-like. It's not gassy at all. Igarashi is known for its gasiness when pumped directly from the bottle. It has a slight sweetness in the mouth 👄. And a slight bitterness that spreads 👄. Second bottle of Rakurakutsuru. It is a brewed sake with a very high degree of alcohol (19-20 💦). I bought a small bottle because I wasn't sure, but I might as well have bought a big one. The regular size was a square bottle, which is an unusual shape for sake. I think it is best to drink it on the rocks, but you can also drink it straight, but I'm afraid of the aftertaste 😁. There are similar types of sake such as ice breaker, but I think it has a clear taste in comparison. I recommend it for summer👍

Went out to eat Izushi soba with my family👍. After dinner, we stopped by a nearby sake brewery. I often visit Izushi, but this was my first time to visit this brewery. I think this is probably the only junmai I've ever had. I recommend this sake at room temperature👍. Cold sake has an overly pronounced acidity, but it can be drunk neatly. At room temperature, the sweetness is more easily felt and the overall balance is better. In addition, I drank it hot and felt the spiciness strongly, but it was very smooth. You can enjoy the change in taste with the change in temperature 😁.
