Cold.
Purchased at Fukuda Sake Brewery.
I bought a lot of it, so I drank it all at once to reduce the amount.
It is a sparkling type, not too sweet, not too spicy, and easy to drink, but it has 14% alcohol content.
I am not a fan of carbonation, so the carbonation was stronger than I expected, and it hurt my nose.
I think I prefer Nagasaki Bijin if they are made by the same brewer.

Crystal silver coloration.
Melon, apple, etc., ethyl caproate.
Ueshin powder, white dumplings, lime.
Elegant sweetness, acidity is smooth, full-bodied and pleasantly bitter. While it has a sweet aroma, it is relatively dry and clean as a taste.
Personally, I quite like the taste.

It is refreshing and goes well with fish.
As expected of a Nagasaki sake 🍶 with sashimi.
The Inoue Sake Brewery in Oita, located on the border with Fukuoka Prefecture, is a brewery with a long history. Named after Ms. Yuri Inoue, the only female toji in the prefecture, this sake is made with the utmost care, starting from the rice cultivation process at the company.
The taste is melon-like sweetness. It has a richness and fruity flavor that is typical of unfiltered, unpasteurized sake. It is a modern bottle.
I didn't know there was such a sake in Oita, so I guess sake is very deep. Incidentally, this sake is said to be limited to 1,000 bottles. Perhaps it is a seasonal version of the Yuriai brewing series.

At Simme, Kanda
15% Kumamoto yeast, Yumacho, from the acidity
The owner's lecture is gospel to me.
I see, it is not an aroma that wafts to the nose, but a fragrance that reaches the nostrils by holding it in the mouth.
Thankfully, the owner's words became a device to connect my undeveloped sake brain synapses.
It's been a long time since I've had a draft sake.

Drinks with my coworkers 🍶.
It was delicious ✨

Mellow, aromatic and easy to drink.
Slightly sweet taste, which I like.
Repeater number one! I was attracted by the pop-up sign that said "No. 1 repeat customer" and it was a great decision.
The first Matsumine no Fuji. Low milling of 77% Dewanosato rice from Yamagata Prefecture.
The top aroma is sweet and fruity. The aroma is reminiscent of pears and peaches, and is so gorgeous that it is hard to believe it is junmai.
The taste is not as sweet as the aroma suggests, and the mouthfeel is clean with a touch of umami.
There is a faint bitterness in the aftertaste, but it is not difficult to drink.
There is also some fresh gassiness from the secondary fermentation.

Fresh. Bitter taste that is pleasant in spring.

Purchased at Kigawaya.
And 600 check-in!
I drank a lot.
Fruity ginjo aroma. Sleek and refreshing.
The taste is light and dry. Moderate acidity.
It has a crisp, short aftertaste with a hint of sweetness.
It tastes like a model of junmai ginjo.
It is perfect as a food sake.
Well-balanced, full and lingering aftertaste, slow savor
⭐⭐⭐⭐

On a business trip, I stopped by the Harukawa Sake Shop in front of Takasaki Station to make a purchase. They recommended a new brand from Shibasaki Shuzo. Twice-hot, the aroma is subdued but fruity. Amber in color but modern in taste.
Sushi
Continuing on with a little Sushi 🍣.
I was surprised by this sake I opened the week before last: ‼️

The fruity aroma is unlike anything I've ever tasted before!

Fate has brought us together with Tenzan Shuzo: ‼️
It started with rice shochu (Shichida) and now it is recommended to be heated 🍶💕.
It tastes very fresh even though it is an aged sake
