Cold. Purchased at Fukuda Sake Brewery. I bought a lot of it, so I drank it all at once to reduce the amount. It is a sparkling type, not too sweet, not too spicy, and easy to drink, but it has 14% alcohol content. I am not a fan of carbonation, so the carbonation was stronger than I expected, and it hurt my nose. I think I prefer Nagasaki Bijin if they are made by the same brewer.

Crystal silver coloration. Melon, apple, etc., ethyl caproate. Ueshin powder, white dumplings, lime. Elegant sweetness, acidity is smooth, full-bodied and pleasantly bitter. While it has a sweet aroma, it is relatively dry and clean as a taste. Personally, I quite like the taste.

The Inoue Sake Brewery in Oita, located on the border with Fukuoka Prefecture, is a brewery with a long history. Named after Ms. Yuri Inoue, the only female toji in the prefecture, this sake is made with the utmost care, starting from the rice cultivation process at the company. The taste is melon-like sweetness. It has a richness and fruity flavor that is typical of unfiltered, unpasteurized sake. It is a modern bottle. I didn't know there was such a sake in Oita, so I guess sake is very deep. Incidentally, this sake is said to be limited to 1,000 bottles. Perhaps it is a seasonal version of the Yuriai brewing series.

The first Matsumine no Fuji. Low milling of 77% Dewanosato rice from Yamagata Prefecture. The top aroma is sweet and fruity. The aroma is reminiscent of pears and peaches, and is so gorgeous that it is hard to believe it is junmai. The taste is not as sweet as the aroma suggests, and the mouthfeel is clean with a touch of umami. There is a faint bitterness in the aftertaste, but it is not difficult to drink. There is also some fresh gassiness from the secondary fermentation.
