Kinmyo Junmai Sake 60% 15-16% 720ml Kinmyo by Negami Shuzo is my new favorite sake. The acidity is up from last year. The characteristic custardiness is almost gone, and a green apple-like fruitiness has been added instead. It also has a spiciness to it. It is a different taste from last year. (*^_^*)🍶🍶🍶🍶 Shizuoka business trip (Part 1) I got a bottle of Kinmei which I think I bought at Matsuura Sake Brewery. The aroma was mild, with a nice, smooth sweetness and umami 😊There was also a touch of acidity afterwards, which made it seem a bit dry 😚👍. It seemed like a sake that goes well with food 🥳.

#Funabori# A bit of a bad look 😅. Homemade sundubu jjigae with a side of homemade sundubu jjigae. We had this one. The sundubu jjigae was I kept the spiciness low so that my family could also enjoy it. I made the best use of the soup stock of shijimi clam. The sake does not have much rice flavor 🤔. Maybe because it is a ginjo sake. It is quite light.

The other day I walked past the liquor section of a large supermarket and found a familiar name for a sake 😁I found Chitoku, the gateway to Miyazaki Prefecture 🐎 breaking through the impregnable castle gate of Miyazaki Prefecture 🐎. At home. Sake tasting party with friends after a long time. We brought our own sake. First up was a local sake from Echigo-Yuzawa, a gem bearing the name of the first head of the Shirataki Sake Brewery. The aroma is gorgeous, and in the mouth you can taste the acidity and umami, with a slight lingering alcohol taste. It leaves a slightly bitter or rough feeling in the back of the throat. The Shirotaki Shuzo is known for its Kouzen Nyosui, which has a fuller aroma and taste compared to the Kouzen Nyosui. The bottle was also unusual, with an innovative volume of 630 ml. This is the first brand I've seen and the taste is great. ‼️

The first Toyoshu in a long time is a pure rice sake brewed with the Yamanokami yeast derived from sasayuri (a kind of lily of the valley) that blooms in the sacred grounds of the Ogami Shrine, a sacred place for sake. If you are a sake drinker in Nara, you must try this 😁. Perhaps it was because I was used to light and fruity junmai sake, but it was alcoholic, not too sweet, and had a firm mouthfeel. But it has a modern feel and is easy to drink. Yamano kami yeast was surprisingly not peculiar 🤔. Thank you for the food 🙏. I think I'll go visit Ookami shrine ⛩ again.
