My favorite NEWBORN from Akabu. this sake future. I got it for sure again this year😊. It's a draft sake, so I'll open it as soon as possible: ❗️ Sake Mirai 50% polished, 15% alcohol by volume I removed the plastic cover and opened the crown. The sound of opening the bottle is mf and I'll make love to you It's very lively. The aroma is slightly tangy, but it has a nice aroma of honey apple and melon. When you drink it, it has a sweet and juicy mouthfeel with a fresh tanginess. The sweet and juicy mouthfeel is mixed with a fresh piquancy. It's still delicious ✨😆😆. The strong flavor gives you a great sense of satisfaction after drinking it. ‼️ It was definitely delicious again this year👍

I heard that the head brewer of Amami has been changed from Mr. Fujioka. I was curious about the new Amami. I tried Momoten, my favorite sake. I opened the bottle and made love to it at mf. I think the gas is moderate compared to last year when the crown flew away. The top-tasting aroma is fresh citrus and a hint of sweetness with a touch of Japanese pear. When you put it in your mouth... Oh, 😳 I see... It's different... The impressive sweetness has been reduced and the schwarziness has been moderated. The sourness and bitterness has increased I also felt a little bit of spiciness. Hmmm... Not bad, But it's more like a classic than before... Personally... I preferred the old one.

I gave it back to my Urawa Reds-loving brother who sent me a hana-yokuyo, Red Diamond by Sohno-Kangiku. I was thinking that I would like to drink Sono Kangiku too. I heard that "Junjitsu", the leap day of 2/29 aperture, was released. I had been in a moratorium on saké because I had lost my goal of drinking Hana-Yokuyo, which my brother gave me at home, However, I got some Sono Kanjiku for myself and to give back to my brother, so I'm going to start again soon. (I still haven't decided what my next goal is 😅) Ihyakumangoku 29% polished (← 29 bound 🤣), 15% alcohol. When I remove the plastic cover and apply force to the crown The bottle opened on its own. This one is very energetic 😊. Fine bubbles appear after a little while after pouring into the glass. The top aroma is honey apple 🍎 with a slight pineapple 🍍 and strawberry 🍓 feel. The palate is not as sweet and juicy as I imagined it would be, It has a sweetness that is elegant, The acidity is accompanied by the chilliness of the gas, The bitterness that increases the sense of three-dimensionality is impressive. The acidity has no lactic acidity. The acidity has no lactic acidity and the wine is polished, so it is not heavy. Although I fulfilled my drinking out the other day Hana Yokuyo was the last stronghold of home drinking There was no place around my house where I could buy it, I was thinking that the time to buy it and drink it at home would be when I graduate from sake brewery..., I had no idea that the delivery from my brother as a birthday gift would be HANA-YUYO ‼️ This makes me happy 🥹. Ginfu 48% polished, 16% alcohol by volume The opening sound is mf and short psshhhh ❗️ The top aroma is pineapple 🍍. It has a refreshing aroma that seems to come from the acidity and a slight lactic acid milky aroma. There is also a slight lactic acid milky aroma. When you put it in your mouth, you will be surprised how delicious it is 😭. The aroma is a gorgeous pineapple, but the taste is clean, and like a Daiginjo, the aroma makes you drink it! I can't think of anything else in the sweet and juicy lineage that's as beautiful as this! I was a little worried about the bitterness, but there is not much of it. I was simply impressed by the deliciousness ✨ It was a nice surprise gift 😊. Well, my goal suddenly disappeared. I don't know what to do with my sakewa activity🤔. On an ordinary day. Why not have a good drink? After a mountain of work, I launched alone as a mid-workout. Instead of champagne... I guess I'll have to go back to the birthplace. ‼️ Yamadanishiki from Kumamoto prefecture, 13% alc. The sound of opening the bottle was f the span: ❗️ It was safe to say that the crown did not fly to the ceiling because it had been sitting for about 3 months. However, when we poured it into a glass, it was full of bubbles! The aroma is lactic and rummy with a hint of lactic acidity, while the nose has a hint of sweetness. Rumney type with a sense of lactic acidity. The palate is fresh and easy to drink as always 🤣 with the lightness of low alcohol and a lot of gas. The taste is well balanced between sweetness and lactic acidity. The slight bitterness in the last part is not bad either! If I dare to look for a fault, it's that it's so good that I drink too much! I drank it with sea bream carpaccio as a side dish, while talking to myself about the fact that dancyu featured (albeit small) Sanchi in their article 😆.

The cork is different. 2022 is DIAM10 2023 is DIAM5 Not sure if 2022 was more suited for aging 😅 Miyamanishiki 59% polished, 16% alc. (1 degree higher than 2023) When poured into a glass, the color is slightly yellow compared to 2023. Almost no microbubbles in the glass There is no pungency in the upper aroma. It has a sweetness to it. In the mouth, Oh, it's so different 😳 2022 has a rounded, rounded sweetness. The acidity of the sake's yeast yeast is definitely present, but the sweetness but the sweetness is wrapped by the sweetness and the matured taste jumps in strongly. There is no impression of dryness. When I drank another brand of Sogape that had been aged for 6 months I was aware of the difference in taste compared to the new sake. But after comparing them again, I clearly recognized the difference. Huh? So, which is better? This is a matter of taste, but if you like sweet and savory, I think it tastes better when it's aged 😋. I drink it sometimes when I'm out for a drink. Gakkie often roars that it's so good! When I saw the label of my favorite sake Mirai I bought it for drinking at home for the first time in a while. This time, too, I drank it immediately after buying it! Sake Mirai 60% polished, 13% alcohol. Oh, so it's low alcohol 🤔. The sound of opening the bottle is a short p ps Microbubbles in the glass 🫧. The top aroma is a moderate honey apple 🍎 but surprisingly citrusy too! I had an image of Muscat when I thought of Gakki, but this is a little different. There is a bit of a twang that I don't like. (This is the kind that subsides after a day's exposure.) I drank it while imagining a strong sweetness since it is the future of sake... Surprisingly, it has a clear and refreshing acidity with a gas infused taste. When the temperature was raised a little, the hidden sweetness came out, but the sweetness was moderate. The last taste is a little bitter. I didn't know that even Sake Mirai could have this kind of taste 🤔. It was a bit unexpected.

Skiing last week on Friday and Saturday ⛷️ Even though it's the season of lack of snow. Two days of snow in a row without sunshine😅 (pic 4) So it was a situation like I drank immediately the day I bought SNOW EX for the 3rd year in a row ❗️ This is the 3rd nigori 😃. Now let's drink it... and it's kinda wet... After the liquor store, I stopped by another store and went home. It was leaking a little as if it had warmed up 😱. It's also a sign of good health! 60% polished domestic rice, low alcohol content of 13 degrees Celsius I took off the aluminum cover. I opened it quickly. The crown was pushed up. The sound of opening the bottle was "Boo-hoo-hoo". The aroma is of muscat and rum Fresh acidity and good sweetness on the palate The sweet and sour taste with a sense of lactic acidity is delicious. It has a milky richness that only nigori can have, but it's not too sweet. It is not too sweet and can be drunk without hesitation. The bitterness at the end is slight and makes the cup go on and on 😆. Delicious as always!

(Logs.) The second nigori of this year is Hirotogawa ❗️ which I unknowingly went through last year. I'm looking forward to it because it has a good reputation😊. Fukushima Yumeko 60% polished, 16% alc. The sound of opening the bottle is mf and psh! Just when I thought, "Hmmm, that's how it feels..."... Bubbles started rising one after another, and the niggles that had accumulated about 2cm at the bottom were automatically stirred. ‼️ Pouring it into a glass, of course it's full of bubbles 🫧! It's like champagne 😆. The top aroma is muscat and a little bit of banana. In the mouth, it's super fresh ‼️ There is sweetness, but it is surprisingly dry. It has a pleasantly sour taste. Akita Sake Komachi 50% polished, 16% alcohol by volume When the aluminum cap is twisted tight, the opening sound is almost silent! The aroma is of honey apple. Beautiful ginjo aroma When you put it in your mouth, the acidity is also clear and you can feel more apples. The sweet aroma and moderate acidity make it easy to drink. The finish is slightly bitter. I'll open this 😉. 60% polished domestic rice, 13% alcohol by volume When you remove the plastic cap and open the crown, the sound of the bottle being opened is a mp sound: ❗️ Microbubbles in the glass 🫧. The top-tasting aroma is, oh, this year it's a bit greefy - muscat with a refreshing citrusy taste. Fresh acidity with a bit of piquancy on the palate ‼️ Sweetness is moderate and refreshing, with a delicious sweet and sour taste: ❗️ The finish leaves a slight bitterness and a lemon squash-like impression. When I had finished eating dessert 🍨, the manager brought it to me in a hurry. The manager rushed to bring it to me. This year's Kakushin Honmaru is not honjozo, but junmai ‼️ And it's still only 5 days old, so it's still a pure sake. ❗️ I'm looking forward to this! 55% polished domestic rice, 15% alcohol by volume When I tried it... Wow, I've been hit... 🏳️ Fresh with nectar Thick sweetness and umami The fresh sourness of the lactic acidity of the sake is blended with the lactic acidity of the sake. Delicious😍! I got 2 gou of this too and really finished it 🏁. All in all, we had 1.5 sake bottles for the 4 of us! Thank you very much again today ❗️

Fifth place went to the natural selection.... It's been a while since I've had a Tenpiki. I thought it was a very gorgeous label. ❤️⛰️ Love Mountain, isn't it? Banshu Aizan 50% polished, 15% alcohol by volume We were almost done with our meal. This is moderately sweet and delicious 🥰. We had 2 gou again, and ice cream for dessert. That's it for today! But there was still the last one 🤭.

Fourth place is the first rocky shore boast in a long time. Isozumo is a little bit expensive. I'm glad because I don't often buy it myself. ☺️ Tojo Yamadanishiki koji rice 50%, kake rice 55% polished, Alcohol 15-16 degrees Covered with a light-shielding film On the palate, it has a ginjo aroma with a hint of acidity. It has a slightly dry taste with a hint of acidity. It is a bit classical and has a nice sharpness. We drank 2 gos of this wine, and then we had the next one.
