Sweet with a light citrus-like astringency! Not pure sweetness, but sweetness with presence. I wonder what it is, it is raw and fresh. The lingering aftertaste recedes gradually and smoothly. The acidity is assertive, and it is delicious in a clean, refreshing mouthfeel. There is also a gaseous feeling that is typical of Kangiku.
Two days have passed, and the citrus image I had initially had has completely faded. It is like a mildly sweet sake with strong acidity and a clean taste.

Sweet and sour springtime tempi! Also known as Momoten. Gassy and a bit piquant in the mouth. It has a freshness and cleanness that fits the image of spring. The other version of Tenbi that I drank before was too clear and had no "kick" to it, but this one has more flavor and I like it more.
When the temperature rises a little, the image becomes juicy!

A sweet noble sake with a colorful taste. The aftertaste has an extended sweetness. The sweetness of Yamadanishiki may be maximized. It is not all about the sweetness, but also has a complex flavor like richness. The alcohol content is low, so it is easy to drink like a juice. Considering the flavor, it seems to be more robust, but perhaps because it is a draft sake, it has a freshness and a bit of lightness.
Despite being so easy to drink, the alcohol content is 17 degrees. It's a monsoon enchanting sake. Terrifying!

This is a "modern Yamahai" brewed only with local rice, water, and in-house cultivated yeast, so expectations were high!
The first sip was very soft on the palate, and the umami flavor spread quickly, and the low alcohol content made it easy to drink!
