I think this is the first time for me to drink sake made from Koshihikari rice. It is a nigori sake with a fizzy, fruity, sweet, and tasty flavor, and I finished it in no time. It has no bitterness, which is often found in nigori sake, and is very tasty. It is perfect as an aperitif. KumakichiW Yamadanishiki Junmai from Watanabe Shuzo, a brewery I once visited in Hida.
Even though it is a junmai sake, the Yamada Nishiki is polished to 45%, giving it a rich sweet flavor with a great impact!

Of the many Aizans I've drunk this year, the Zijima has a much drier taste, with a refreshing umami flavor that makes it easy to gulp down. I'm also looking forward to the nigori (๑˃̵ᴗ˂̵) KumakichiAt long last, the long awaited shipment of this sake has begun!
Juburoku (doburoku) from Takeshige Honke Shuzo!
This doburoku is only shipped every year from the second half of October to March, and because it's unpasteurized and the yeast is still alive, it must not be placed horizontally in a PET bottle with a hole in the lid!
Just as it is described as sweet and sour Awaraku, this is a doburoku that overturns the concept of doburoku you've been drinking!
It was a fun bottle that had enough sweetness from the rice that when you grinded the remaining rice grains underneath, you could feel the slight foaming and pleasant acidity spreading.
Because of the low alcohol content, you can guzzle it down with a glass, so even if you have three bottles in your fridge, it probably won't last more than two weeks.
If you like sweet sake, muddled sake, or doburoku, this is a limited time bottle that you should definitely try!
