I bought it at a liquor store I wandered into on my weekend run🏃. Since I'm on meal duty today, I decided to make the sake and the snacks to my liking. However, I decided to go with my wife's favorite brand, Tetorigawa. I like it too, and it is consistently good! The aroma is fresh and fruity. The mouthfeel is fizzy with a slight tongue tingle. The inside is umami. The aftertaste is sharp from bitterness. It went well with skipjack carpaccio, tuna sashimi, steamed clams with sake, salted squid, and stewed fugu (blowfish). It went well with all of them.

Kankiku Ocean Ninety-Nine Hakuginkai The only nigorigo of Kankiku. Lactic acid bacteria soda-like as written. Mr. Yanagishita, the toji, originally worked as an aircraft mechanic for JAL at Narita Airport, but his attachment to his hometown of Chiba and his desire to "do work that only I can do" led him to the path of sake brewing. After joining Kangiku Meikozo in the beer brewing department, he was selected to be the toji (master brewer), even though he had no experience, when the previous master brewer retired. He initially trained under his predecessor and is now in charge of sake brewing as a toji. The name "Kangiku" is said to have come from the appearance of Kangiku (chrysanthemums that bloom in winter), which bloom strongly and beautifully even in the coldest season.

A little drink (tasting) from jogging on Monday's regular holiday I stopped by Fukuhara Brewery for the first time, which I had been curious about for a while. I was so excited to see so many sake on the shelves (lol). I chose Gobashi Junmai Araubashiri for the tasting. Fruity aroma with a banana-like flavor. The mouthfeel is clear and slightly tangy. The inside is softly rice flavor. The sweet bitterness lingers in the back of the throat. The lingering aftertaste is very satisfying, so it goes well with a variety of meals.

Rice used: Yamagata Prefecture, Izuwanosato Sake degree -25 Acidity 1.8 It was my first visit to a sake shop, and I wanted to buy a sake that could only be found here. Then I noticed a sake that is only available at four stores in Japan, and it was a kijozo-shu (a sake made with alcohol)! Everything was too chaotic, and I wanted to try this sake! What would it taste like? Let's go! The aroma is surprisingly mild, with a freshness derived from the aluzoe flavor and a faint sweet aroma like that of murayuke. The slightly viscous sweet brewing water... Is this sake? This one brings a deep, rich sweetness like port wine. If I had to say more, I would say it is like Murayusuke, but a kijoshu with honjozo is really a sake that shatters the concept of kijoshu. The astringency and acidity pleasantly muffles the palate. This one is thicker than Shinmasa's Yonotori. However, by adjusting the aroma with aloso sake, the brewer has created a sake that is wonderfully easy to drink. I think raisins would be a good accompaniment. I will visit Fukuhara Sake Shop again! Thanks again for the food tonight!

Eikouji Yaminari Shusui It was delicious with an assertive taste typical of Eikoufuji. Pineapple Eikoufuji's label and name have a high school boy feel, and this time too, the official responded by saying the name looks like Manjikai on social media. The name comes from the fact that the character for "glory" was added to the original sake name "Fuji" to express the wish for prosperity. It is also said that the symmetrical character "Eiko Fuji" represents the brewery's philosophy of "sake brewing with no two sides of the same coin.

Soumula The label Hometown Crafts Nagai Sashiko was difficult to understand. I prefer labels that are easy to understand when buying. Modern taste, fruity, refreshing and bitter. Oh, it smells so good! When the bottle is opened, the fruity aroma rises at once. Amazing! It is a summer Jun Dai of Matsumidori, a summer staple. The aroma is typical of Omachi. Pine? Apple? Is there a hint of LaFrance? This junmai daiginjo is full of fruity sweet and sour flavors. It is irresistible. I also like the gentle fizziness that stimulates my tongue. I love Matsumidori after all. Ryo and S.TOKYO are both delicious and modern, but Matsumidori suits me better.

My favorite Sawanoi nigori sake, specially ordered by Fukuhara Sake Shop. It has a faint apple-like aroma. In the mouth, it has a gentle sweetness, acidity, and a refreshing umami flavor that is typical of Sawanoi's nigori sake, which spreads with a fizzy, bubbly feeling. A refreshing nigori sake perfect for summer. I didn't know that Ozawa brewery also offers this kind of sake that is only available at liquor stores. That's wonderful!

While eating Gifu cuisine, I befriended a nearby uncle and we talked about Hourai and W. The three "W "s, Watanabe (Watanabe sake brewery), World (World), and Warai (laughter), are incorporated into the name, expressing the desire to convey the charm of sake to the world and to bring smiles to the faces of those who drink it. More than 14 varieties of sake rice are used in the W series, and in order to clarify the differences between the different sake rice varieties, the yeast is unified as "M310 yeast". The rice polishing ratio is also unified at 50%, and although the sake is Junmai Daiginjo standard, it is labeled "Junmai-shu" on the label.

Its name comes from the paradoxical idea that "only he who pursues two hares will catch two hares," and it aims to harmonize seemingly conflicting elements such as taste and aroma, sweetness and spiciness, heaviness and lightness at a high level . Maruishi Brewery has abolished the traditional toji (master brewer) and kurabito (brewer) system, and instead has adopted a "tank-responsible brewing" style in which all employees are involved in the sake brewing process.
