The melon-like label made me think that was the case, and yes, there is a melon-like sweetness, but as a fruit aroma, it's all banana! It is more like magic ink than that, though. The sweetness is moist, mild and delicious! I thought it would have a modern atmosphere, but the sweetness suddenly disappears and the bitterness and alcoholic pungency suddenly transforms it into a classical atmosphere. What an interesting laugh! I think it is better to drink it as a food wine with sweetness rather than on its own. For example, with a salad with a strong dressing. Gomadorette, Caesar, etc. would be good. Fish should be eaten like carpaccio, not sashimi! For meat, pork shabu-shabu! After all, they all end up like salads. I was a bit surprised by the strength of this sake, but it is very tasty as an ordinary sake in this direction! On the third day, despite the time of year, I had it with nabe (hot pot)! I don't know if it's a great match, but it's starting to taste less alcoholic and more melon-y, which is a taste that reminds me of the old days! Delicious!

Nokangiku OCEAN 99 Aomi -Summer Sea- Unfiltered unpasteurized sake Light sweetness and acidity. The label on the back says "fresh apple-like" 🤣. Slight bitterness at the end, but it goes down well as a summer sake. I guess I was right to buy a bottle of this one.

Takehaha in Kazuma Brewery damaged by Noto Peninsula Earthquake. Akabu Sake Brewery version. All the sake is made in Noto. Akabu Sake Brewery reached out to us and brewed it with the employees of Kazuma Sake Brewery. It is wonderful. We were not able to support them in any way, so we purchased it. I opened the bottle immediately, but the lid was so tight that I spilled the bottle when I opened it. What a waste! The taste is melon and melon-like, and the rice is very juicy and tasty. Home drinking. Go to a liquor store that is considered a sacred place. The selection is amazing😳 And there was a great one from Akabu, so I bought it 😤. Yui no Kou 100%. The color is clear. Smell is clear and sweet like pear🍐. The taste is soft and sweet like muscat. The aftertaste is slightly bitter. The mouthfeel is mellow, helping the flavor to expand. The lingering sweetness that drifts to the end is amazing. I think this is zanshin in kendo 🤔 (influenced by the picture on the label 😅). A sake so bold and lingering that it is truly a great achievement 🍶.

I can't tell you how long I've been waiting for this day... When I was just getting into sake, almost 10 years ago, I had a drink with my high school classmates at a pub in Shinjuku and we both liked this one the best. Since then, even if I found it at a liquor store, I never got around to buying it because it was in a bottle. But this time, I bought a bottle of this wine, half desperate, as if I didn't care about the capacity of my refrigerator. The nose is gently botanical with herbs, grass, and earth, and when you taste it, you can sense the fruitiness of grapes and other fruits. The mouthfeel is gentle and soft. However, it clearly has a tangy texture that is typical of nama-shu. This contradictory and contradictory feeling lightly confused my mouth, or rather, my head. There is a slight sweetness, a decent umami, and a moderate acidity. Overall, the wine is smooth and crisp, but there is a surprising bitterness and a lingering finish that is longer than expected. The bitterness is preceded by an astringency that gives it a bit of a white wine feel. It is an interesting and tasty sake that is fruity, yet excellent as a sake-like food wine. It used to be a sweet and fruity sake suitable for stand-alone consumption, but now it is a well-balanced sake that is excellent as a food sake. It is different from what I imagined, but this way of changing with the times is not bad! It is a delicious sake that you can drink all the time! It is a gem that shines only in a bottle!

Modern Namaishige Hashiroshi, which is not a classic in name only. The top aroma is refreshing with ginjo aroma and acidity 🍎. It has a strong sense of gas while being fire-aged.
