Niigata Food and Sake Festival
Last year, the festival was held as Niigata Sake-no-jin OSAKA, but this time the name has been changed!
This time I tasted only one sake brewery due to some reasons😅.
Kondo Sake Brewery participated for the first time!
He was a young brewer!
I think I've seen his Niigata in the past, but I've never had it!

Drunken Star Honjozo
Easy to drink without any alkaloids.
It was delicious cold, so it can be drunk at various temperatures.
Koshinoshiroku Junmai Ginjo
I got the impression that it was clean, light and slightly dry.
The brewer also said it was a food sake type.
Koshinomishika Daiginjo
The aroma of ginjo and the clean taste were delicious!
Junmai Ginjo and Daiginjo are called Koshitanrei.
Aoi Sake Brewery was also there, but I didn't go there this time because they charged for tasting all kinds of sake.
I wonder if I will be able to drink it at the Izumiotsu event next year?
The other breweries were all ones I drank last year, and I'm going to another tasting tomorrow, so I'm out 💦.
I wanted to make room in my refrigerator, so I didn't go near the booth with the mannequins I often see at department stores.

Next is Seikou from Yamanashi Prefecture, a long time ago.
It is a crisp, sharp, and dry sake suitable for a meal.

Today I went to a corner sake shop in Harukas to compare local sake from three prefectures in the Chubu region.
The first one was Urakuyama.
It was delicious, fruity but crisp, clean and dry. 🙆♂️

I opened Hanayuki and wasn't going to open it, but for some reason (not a refrigerator problem), I opened it.
It has a powerful and strong flavor, partly because it is 19 degrees Celsius. It's rich, umami, and delicious.
It's not very sweet, but it's very different from Senju's hi-iru, which is very interesting.
It is very spicy when you drink it again.
It's the opposite of "light and dry" dry sake.
I think it gets sweeter the longer it's been open.

I've been curious about Hanayuki's unfiltered unpasteurized sake for a while.
It has a rich sweetness like a kijoshu.
It is like a honey apple, and the second half is a little alcoholic. I drank hi-ire sake before, but I think hi-ire sake was easier to drink.
I got the impression that it is not a modern sweet sake, but a classic sweet sake.
I had the impression that it was a little sweeter when I tasted it, but the atmosphere in the second half might be a little too much for me.
But as the temperature rose, the second half became easier to drink.
A sake brewery near Dogo Onsen. Like Saka and Motomasa, it was purchased at the Sake Expo in Harukas.
They were sold out of 4 bottles so I got the Sandesi 😁.
Seems like Dogo beer is more famous than sake 🤔.
The top aroma is fruity. It has a refreshing yet tropical sweet taste. Sakurahime yeast is a yeast from a flower called Delphinium 🪻.

It's not on the label, but it's a fresh, gassy sake.
It is fresh and gassy. It has just the right amount of sweetness and spiciness, not flashy but delicious. Some people may like it better than Yamashiroya.
I think it becomes sweeter and more umami when it is a little closer to room temperature than when it is fresh out of the fridge.
The quality of sake is quite different from that of Yamashiroya, but I personally prefer Koshinotsuru.
I have the impression that Yamashiroya tastes great right out of the bottle, but the taste changes so much that I gradually come to dislike it.

Moderately sweet, but overall strong alcohol taste. Complex and a little nutty in the second half.
The impression is quite different from that of the tasting, which was sweet and tasty, but I guess that's what it's supposed to be.

Junmai Ginjo-shu made with Sake Mirai.
This sake has a mild sweetness and acidity.
The alcohol content is low at 13%, so be careful not to drink too much.
Nama-shu made with Akita Sake-komachi.
It is made with soft water, which gives it a soft, sweet taste. However, it is not as sweet as the -7.0 sake strength suggests, and the freshness of the unpasteurized sake makes it a perfect match for all kinds of food.
It uses hops in addition to rice and koji as ingredients, and is what is called a craft sake.
As such, it is not considered sake under the Sake Tax Law.
It has a refreshing, slightly carbonated taste, making it an easy drink even for those who are not comfortable with sake.
It is also good as an aperitif.
Made from Yamagata Prefecture's "Yuki-No-Majin" rice suitable for sake brewing.
