The last of the alcoholic beverages bought at the Sake Expo!
I opened Hanayuki and wasn't going to open it, but for some reason (not a refrigerator problem), I opened it.
It has a powerful and strong flavor, partly because it is 19 degrees Celsius. It's rich, umami, and delicious.
It's not very sweet, but it's very different from Senju's hi-iru, which is very interesting.
It is very spicy when you drink it again.
It's the opposite of "light and dry" dry sake.
I think it gets sweeter the longer it's been open.
Purchased at the Sake Expo
I've been curious about Hanayuki's unfiltered unpasteurized sake for a while.
It has a rich sweetness like a kijoshu.
It is like a honey apple, and the second half is a little alcoholic. I drank hi-ire sake before, but I think hi-ire sake was easier to drink.
I got the impression that it is not a modern sweet sake, but a classic sweet sake.
I had the impression that it was a little sweeter when I tasted it, but the atmosphere in the second half might be a little too much for me.
But as the temperature rose, the second half became easier to drink.
A sake brewery near Dogo Onsen. Like Saka and Motomasa, it was purchased at the Sake Expo in Harukas.
They were sold out of 4 bottles so I got the Sandesi 😁.
Seems like Dogo beer is more famous than sake 🤔.
The top aroma is fruity. It has a refreshing yet tropical sweet taste. Sakurahime yeast is a yeast from a flower called Delphinium 🪻.
Hi Nemuchi 😃
It's a light drinker and I could linger on it forever 🤣.
I think I'll open it tonight and perhaps next time it will go in a different direction 🤔.
I'm looking forward to your review of this positive 😁.
Purchased at the Sake Expo in Harukas.
Like Saka, I heard from Nemuchi that he recommended it beforehand 😁.
It's not on the label, but it's a fresh, gassy sake.
It is fresh and gassy. It has just the right amount of sweetness and spiciness, not flashy but delicious. Some people may like it better than Yamashiroya.
I think it becomes sweeter and more umami when it is a little closer to room temperature than when it is fresh out of the fridge.
The quality of sake is quite different from that of Yamashiroya, but I personally prefer Koshinotsuru.
I have the impression that Yamashiroya tastes great right out of the bottle, but the taste changes so much that I gradually come to dislike it.
Sake purchased at the Sake Expo at Kintetsu Department Store
Moderately sweet, but overall strong alcohol taste. Complex and a little nutty in the second half.
The impression is quite different from that of the tasting, which was sweet and tasty, but I guess that's what it's supposed to be.
Like Nemuchi's review, I wonder if it was tasting magic 🤔.
I thought it had juicy fruitiness like apples and muscats when I drank it again.
But the nuttiness is very strong.
Not only the freshness of freshly squeezed sake, but you can also enjoy the taste of rice with a hint of carbonation.
It is easy to drink, yet has a deep flavor.
This is a sake with a sense of acidity and sharpness.
It is described as "the ultimate food sake," and we feel that it goes well with a wide range of dishes.
Junmai Ginjo-shu made with Sake Mirai.
This sake has a mild sweetness and acidity.
The alcohol content is low at 13%, so be careful not to drink too much.
Nama-shu made with Akita Sake-komachi.
It is made with soft water, which gives it a soft, sweet taste. However, it is not as sweet as the -7.0 sake strength suggests, and the freshness of the unpasteurized sake makes it a perfect match for all kinds of food.
It uses hops in addition to rice and koji as ingredients, and is what is called a craft sake.
As such, it is not considered sake under the Sake Tax Law.
It has a refreshing, slightly carbonated taste, making it an easy drink even for those who are not comfortable with sake.
It is also good as an aperitif.
Made from Yamagata Prefecture's "Yuki-No-Majin" rice suitable for sake brewing.
Fruity is the only word that comes to mind.
It also has a moderate acidity and a refreshing taste.
This was a glass at the eat-in space at the Sake Expo, and I think you will enjoy a different flavor if you let it settle for a few days after opening the bottle.
This is a cup in which only the good parts of the elements of Kaoru-shu and Soshu can be felt in a well-balanced manner. It is not only easy to drink, but also has a clear and elegant taste, just as the name "shizuku" implies.
I bought this Daishichi cup for some reason.
When I drank it before, the classical flavor was not good at all... but... it's good.
This is good. I am happy to confirm that my capacity is expanding.

Last but not least, Shojo, it's been a super long time since I've been to Shojo.
I think it's been since we tasted it at Harukas in 2019 or so.
According to Nemuchi's advance information, all of them are aged for one year this time!
I drank
Zendoiki Junmai Ginjo Unfiltered Nama-shu
Clean and a little fruity, with a sense of ripeness.
Myodo-ki Junmai Unfiltered Nama-shu
It has just the right amount of sweetness, but also has a strong umami flavor.
Gogo Onigami Junmai Ginjo Unfiltered Nama-shu
It felt lighter on the palate, but not as sweet as the first two.
Koukaku Junmai Daiginjo Unfiltered Nama-shu
Forgot to take a picture💦.
I bought and drank this in the past. I reviewed it as nutty back then, but this time it seemed pretty sweet and tasty.
I think I drank some of the later demons too 🤔.
I couldn't talk to the brewer because there were people there all the time talking 😅
There are many more breweries I haven't tried but that's it for this time!
Sake Expo 2025 SAKE EXPO⑬
ONKYO Booth
I was curious about Kunimei, so I tried to drink it.
They said they didn't prepare the one without music playing, so I couldn't compare...
It was sweeter and a little more modern than the Junmai I've bought at Yodobashi in the past. I was surprised because I imagined it to be rough and dry.
I don't know if it's the effect of the music or if it originally tastes like this 🤔.

ONKYO Booth
It was hard to find Miyoshikiku, so I asked for another sake, and the one that came up was Yamatan Masamune.
I could clearly taste the difference.
The one with music had a more rounded taste.
I guess the vibration has the same effect as aging.
I heard that he had them listen to music for about 6 months.
I heard that the taste of alcohol submerged in the ocean also changes due to the effect of the waves, so vibrations do have an effect on alcohol 😳.
Nice Masamune it was👍
Good evening bouken🌙
I've never heard of music mellowing the taste 😳this is like jazz, but I wonder if the taste changes depending on the genre of music you play 🤔that would be worth researching 😁.
Anyway, nice Masamune👍😆.
Hello, Hiro-san.
Do you have a speaker attached to the tank and the vibration makes it age better? I think it will change depending on the genre of music 🤔.
I wonder what would happen if I let them listen to some heavy rock 🎸.

ONKYO booth
I was looking around and was offered an otter, but it's 17,000 yen and there's no tasting, so I can't buy it 😂.
They let you compare the one with music and the regular one.
First up was the Miyoshigiku.
I think I made a bad choice, but the Miyoshigiku is so unique I can't tell the difference 🤣.
Both are sour 🤣
Sake Expo 2025 SAKE EXPO10
A sales person who visited Icoma Sake Shop last year was there.
We drank
Josen Honjozo
I already drink it at home, but they said it can also be heated, so we compared cold and heated sake!
At home I drink it at room temperature, but it doesn't change much at any temperature, so I guess it's versatile?
Matsu no Hana Junmai Sake
Classic but easy to drink
Shiboritate Honjozo Nama Sake
I drank this at home a while ago and compared cold sake and heated sake. Surprisingly, the heated sake tasted better!
Honjozo Nama-no-Harazake
This one was quite robust, but had a delicious flavor.
Ginjo Unfiltered Nama Sake
I've bought and drank this in the past, but I tasted this one too.
I was not as impressed with this one as some of the others I drank this time.
Junmai Nama-nihonjyu Shiboritate Light Nigori
I forgot to take a picture💦The label has changed, but it looks like I've had this one in the past. A little spicy?
Matsu no Hana Junmai Ginjo
Well, it tasted a little off-flavored and the taste was subtle...
Matsunohana Daiginjo Fujiki
Forgot to take a picture💦.
Yamadanishiki with a 40% polished rice ratio.
The taste is a little different from the others, probably because the rice is different.
Tamakae is not suitable for high milling because it tends to crack when polished, so it seems to be Yamada-Nishiki.
The salesman was very interesting and unique.
Sake Expo 2025 SAKE EXPO ⑨
Miyogiku, a brewery in the Kansai region but rarely had a chance to drink it.
I drank
Junmai Yamato
What do you recommend? When I asked him, he said this is the first one.
It seems to be a basic sake of the brewery.
I imagined it to be a classic sake, but it is not so, and easy to drink. Relatively sweet
Gohyakumangoku Junmai-Ginjo Nakadori Unfiltered Nama-Shu Gohyakumangoku
Much sweeter and tastier than I imagined.
Would have bought it if I had visited first 🤔.
MIYORIKIKIKU Mizumoto Brewed with Nara Uruhashi Yeast
I expected 🫶 since it's mizu-hashimoto, but it didn't impress me much...
Hakusu Daiginjo
It had a gorgeous ginjo aroma and rich taste!
MIYOKIKU LIGHT Kijoshu Jungin Brewing
It is a kijoshu but a little light.
MIYOKIKU STRONG Kijoshu Jungin-brewed
Alcohol 17%.
I've had this one in the past.
I don't know if this time it was a draft or not, but it tasted just as sweet and rich as the last time.
They asked me which one was my favorite, the kijoshu or the kijoshu. I said STRONG 😁.
Good evening, bouken-san🌛 Did you not have any unfiltered, raw sake with a water yeast and a yamanokami yeast? I thought you would definitely like it a lot 🤔 I forgot to drink my kijoshu strong💦.
Good evening, Mr. Nemuchi.
I saw your post, but I think they were sold out because I didn't see any fresh water yeast 🤔I think you would probably like Strong because it is dark but sweet 😁.
