I came across Rusty Cat Rock last year. This year marks the 10th anniversary of its release. It is a daiginjo with a rice polishing ratio of 39%. It is basically sweet with a touch of sourness, but it finishes with the umami of the rice and a bit of bitterness. It was quite delicious.

We ordered this sake at a restaurant we patronize because of the label. The owner and other regulars told me about the sake and the brewery. A bottle of sake that gets the conversation going...that's the best part of drinking outside 😊. I thought it would be sweet because of the gentle sourness in the mouth, but it was surprisingly dry. I thought it would be sweet, but it was dry. As the name suggests, it was a crisp, fluffy, soft-tasting sake.
