It is amajuwa like Tara-chiyo, but it suddenly turns sour, pungent, and sharp. The bitterness and sourness appear from the very beginning, but the smooth sweetness is also present at the same time, which is a strange sensation. The second cup has a smooth sweetness and a tangy sharpness. Delicious.
I had never heard of sake rice called Hana-buki, but it was born in Aomori Prefecture and named after the cherry blossoms at Hirosaki Castle. Moreover, I had no idea that it was the parent variety of Dewa Tsannin. I have not studied enough.
