Purchased at a brewery in Sawara!
This is a daiginjo from a sake brewery in "Sawara", a suigo area famous for its handmade "Hon Mirin". Kaishu" is a reference to Katsu Kaishu, and it is said that this sake brewery was named after him due to the fact that he stayed there for about a month.
The aroma is sweet and gorgeous, but the taste is refreshing. It is a beautiful sake with a rich and mellow rice flavor.
The freshness of the throat and the crispness of the aftertaste are quintessential!
It made me want to visit Sawara again.
