Memorandum Rice polishing ratio: Yamadanishiki 35 Alcohol: 15° to 16° C Purchased at a brewery in Sawara! This is a daiginjo from a sake brewery in "Sawara", a suigo area famous for its handmade "Hon Mirin". Kaishu" is a reference to Katsu Kaishu, and it is said that this sake brewery was named after him due to the fact that he stayed there for about a month. The aroma is sweet and gorgeous, but the taste is refreshing. It is a beautiful sake with a rich and mellow rice flavor. The freshness of the throat and the crispness of the aftertaste are quintessential! It made me want to visit Sawara again.
