The aroma is subdued, with a slight hint of grain. In the mouth, one senses a full acidity with sweetness, and once the acidity picks up, it ends with sweetness. The acidity is quite strong and the body is thick, but it is easy to drink. Good ‼️‼️‼️
It is my personal favorite sake. I bought it when I happened to see it on sale at a local sake brewery in Tochigi. It has a rich ginjo aroma and a slight old-fashioned aroma, and while it has a mildly sweet mouthfeel, it is very easy to drink. I love ‼️‼️‼️‼️.
Junmai sake, 60% rice polishing ratio
It has a clear but rich apple-like ginjo aroma. The taste is pleasantly stimulated by the alcohol and has a strong umami flavor, probably due to the light nigori, but overall, as the name suggests, it is dry and has a good finish. Umaai: ‼️‼️‼️
Hops are used as a secondary ingredient and it falls under the category of other brewed liquors. Despite the secondary ingredients, there is no bitterness and a rich muscat aroma that is different from the ginjo aroma. It has a smooth, sweet taste and is easy to drink. ‼️‼️‼️‼️
A little bit of a tangy taste (fishy taste? bran?) The ginjo aroma is apple or pineapple with a slight tang (bran?), and the alcohol has a stimulating effect. The smooth mouthfeel and the tingling sensation of alcohol give it a refreshing yet robust sweetness in the aftertaste. Good ‼️
No yeast added (brewed with brewer's yeast). It has a smooth mouthfeel like a nama-zake, and the apple or pineapple type ginjo aroma comes back after swallowing. Good ‼️‼️
The robust aroma of rice is topped with a tangy alcohol smell. The sweetness of the rice and the thickness of the body are the core of the wine, but it also has a sharpness due to the stimulation of the alcohol and the acidity. Good with meals. ‼️
The aroma is a full, melon-like ginjo aroma. When swallowed, it leaves a stimulating taste on the tongue and can be drunk quickly and crisply. Good taste. ‼️
Oaky bitterness and aroma with a hint of woodsy and smoky notes. The first attack is flat and the acidity spreads gradually. The aftertaste is a greenness that spreads like a hard part of a pear with little sweetness. ‼️
The ginjo aroma is apple-like. There is also a fresh pear-like aroma, and the aroma stands up well. When you drink it, it has sweetness and a thick umami flavor. The acidity is firm and crisp, making it easy to drink and delicious. ‼️‼️‼️
Summer sake. Aroma is rice-like, with a pineapple-type ginjo aroma. The mouthfeel is tangy with acidity and mild sweetness. As you swallow, the blue freshness rides on your tongue with sweetness. Good ‼️‼️
Sake pink in color due to fermentation with red yeast. It has a cloudy taste, with a mild but strong acidity amidst the thickness and sweetness of the oli. The aroma is crisp and alcoholic, with a refreshing pear aroma. Good ‼️
The aroma is sultry and restrained, and the taste is fresh. The light bitterness and mouthfeel make it easy to drink. After swallowing, it leaves a strong umami taste. Good ‼️
It is served heated. The aroma of cedar that wafts in the latter half of the bottle along with the heat is pleasant. The aroma of cedar wraps around the strong sweetness and tangy alcohol stimulation. The aroma of cedar becomes stronger as it gets lukewarm in the sake cup, and you can enjoy the change in expression. Umaii ‼️
