Niigata Bijyo 15th Anniversary Sake The label is designed by Ayana Otake. It's a label of his taste, and it seems that fans buy it for the label. The concept was to make a dry sake to go along with the sweet "Murasaki Uchu"! The concept was to make a dry sake in the midst of the sweet "Murasaki Chuo". It's definitely spicy when you compare it to the sweeter "Murasakyuu"! ...... but not so much for a dry sake😅 The top aroma is very spicy with a hint of red pepper. But it's a dry sake, so it has a nice spiciness to it. It's spicy enough to make a bear burst into flames.

The name "Ringo Pom Pom" is derived from the French word "pomme," meaning apple, which is translated into Japanese as "apple, apple, apple," a cute name. I thought it was low-alcohol and tasteless. I didn't think so, and didn't look at the alcohol content when I first sipped it, but to my surprise, the taste and aftertaste were very deep! The taste just disappears and it's so light that when I looked at the alcohol content, it was 7 degrees... I bought this sake because of the "high malic acid producing yeast", but I didn't expect it to be so mild. I prefer it to be a little more acidic. The sake is said to have a sake strength of -68, but I don't feel it has that much sweetness. It would be interesting to drink it cold.

What a full-bodied sake when you drink the top clear part! What a rich and delicious sake when mixed with other sake! It's like eating sakekasu (sake lees), the mash is amazing. The sweetness is unexpectedly low, but not so much that it is spicy.

As the temperature rises, the acidity rather emerges. However, since the temperature is 18.5 degrees Celsius, it is not safe for me to drink it in large gulps. Without ice, it has a brassy smell, so I prefer to dilute it with ice and chill it. Tasting it as it is, it is certainly made to be enjoyed with a splash. It is not spectacular, but it is robust, dense, and full of flavor. If only it were a little sweeter and more acidic. Slightly yellowish, with few legs, thin but strong.
