This time, the Yoshizaki Sake Brewery's Nama-no-Hara Sake. Is this really a pure sake? It is so clear and crisp that it makes you wonder if it is really sake. But after drinking it, you can taste the umami flavor.

We went to see Kururi Castle, but were surprised by the unexpected promotion of sake, as there are apparently four sake breweries in the area, which is famous for its water. At the Sake Museum, a new tourist center in front of the station, sake (junmai, junmai ginjo, etc.) from the neighborhood can be tasted for 200 yen/30 ml.
I was surprised to find that Kururi's sake is very unique.
The Yoshiju I drank at a soba shop was a mineral type of junmai ginjo.
Normal sake for traveling. It is basically so-so and loose, but with a sour aftertaste. I thought it had a bitter taste, but it seemed to be a mineral type. It's a pleasant feeling to drink with soba noodles.

The boss of Kinsho-kai used to talk about the smell of Kichiju Hi-ire. It is true that it has a harsh, twitchy flavor, and all the members were astonished.
The boss said, "If I could talk to the brewer, I would like to ask him if this flavor is what he is aiming for or if he makes it because he thinks it is good.
He said something like that. This time, I dared to buy that stinky Kichiju and let the boss drink it blind. A few years ago, he was ragging on me, but maybe he doesn't notice it's blind, right?
Then I poured it into the boss's glass.

I can't believe I got it right without even tasting it. I didn't ask you to guess which one is Yoshitoshi, but to guess from thousands, or even tens of thousands of sake brands with no hints.
My analysis suggests that the distinctive smell may be a combination of thyme herb, mint, seirogan, and cemedine.
By the way, "Yume Kaeru" is a delicious new sake from Yoshiju.
