The brewery restarted as Choshu Brewery in 2020, continuing the business from Kodama Brewery, which went out of business in 2018. The name "Amami" is derived from "Ten" from "Amaterasu," the sun god who nurtures rice, and "Bi" from "Miroku," meaning sake. It's a beautiful sake that's all the rage these days. It is a slightly carbonated Kirin Lemon for adults that somehow makes you feel intoxicated. It's delicious, easy to drink, and very dangerous. The liquid is almost colorless and transparent, and it produces a lot of fine legs. The glass is covered with fine bubbles.

Denshiro Koganei, the founder of the company, started a small sake brewery in Atsugi in 1818 with a single-minded desire to do business that would benefit the world. The name of the shop at that time was "Masuya," and he named it "Seimasu," meaning "prosperous," to indicate that the business would continue to flourish. The sake is relatively dry. It has almost no sweetness or acidity. However, it is not light, but rather full-flavored, making it quite drinkable. Two thick legs appear a little later. This is the 627th one-cup, one-pack festival.

It is said that the name "Hakkouda" comes from a Japanese poem, "Koma no sato (more horses than people)," which means "a clear spring is springing up in the village of Koma. I thought, "Isn't Hakkouda in Aomori City? But it seems that the western edge of Shichinohe Town, where the warehouse is located, is connected to Hakkouda. When I opened the bottle, I thought it was an adult lemonade. I thought it was adult lemonade, but the flavor was not sour. The spiciness was followed by bitterness, and then the sweetness came slowly. As the name suggests, there was a slight ooze, and the legginess was almost invisible.

Itako, where the brewery is located, is said to be so famous for its irises that people say, "Iris is the name of Ushioi. The aroma is of chestnuts and rice (not rice with chestnuts), and the sake is surprisingly not rice-like, although the acidity is derived from grains. The acidity is from grains, but when you put it that way, it has a rice-like sweetness. This is the 625th one-cup, one-pack festival.

The brewery was founded in 1920 when four local volunteers brought rice to the brewery and started brewing sake, and the brand name was initially "Sawanotomo" because of its origin. The name was changed to "Sawanoizumi" in 1960 from "the name of the place (Nakazawa) and the spring water" because the water was used. It is a robust, mild, slightly dry sake. It is slightly ripe, with a hint of chestnut and its sweetness. However, there is a hint of fruity aroma at the top of the nose. This is the 624th one-cup, one-pack festival bottle. The cup depicts a swan that comes to Izunuma, located in the western part of Tome City, where the brewery is located, every autumn.

100% Yamadanishiki produced in Hyogo Prefecture. I thought I've been drinking limited edition sake so much that I haven't had any standard sake ......, but I had a cup of it 6 years ago. It's probably the same one. By the way, I won the second prize in the "Gala-pon" at the recent Kozutsuru 300th Anniversary Thanksgiving Party! The pleasant aroma of ginjo wafted around when I opened it. As I rolled it around, I was struck by its richness and spiciness. The top aroma is of grain with a high acidity, but it is not vinegar. Contrary to the smell, but not contrary to it, it is sour, but not "sour" but spicy? The synergy between the richness and the sweetness sublimates the sourness into a delicious taste. Is it slightly yellow? The liquid and the legs are clearly and distinctly yellow.

It is said that Shokichi I, who was impressed by the "pine tree is green" of the Aioi pine tree in the noh song "Takasago", received the name of "Takasago". If you think you're new to Takasago, you're wrong... I drank it ......11 years ago... It has some kind of fruitiness. The spiciness comes out a little bit in the ripened and mellowed taste. Aroma of soybean flour and banana. This is the 623rd one-cup, one-pack festival.

Liqueur Ibukijima Island, off the coast of Kagawa Prefecture's Kannonji City, where the brewery is located, is famous for its iriko (dried sardines), which are roasted and marinated in kawazuru (a type of sake). The iriko is roasted and marinated in Kawatsuru sake. The iriko is served as a garnish and can be eaten as is or added to the sake. If it is roasted again, the aroma will be more intense. The richness and flavor of the sake explodes when it is heated in a microwave oven. This is the 622nd one-cup, one-pack festival.

It's been 8 years .... Gassan is famous for its impregnable castle, Gassan Tomita Castle, and the best sake of the year was named "Gassan" and presented to the lord as the best sake. The name "Gassan" was derived from this historical background, aiming to "always produce the best sake like that offered to the lord". In other words, the origin of the name "Gassan" is the castle rather than the mountain. It still has a slight effervescence and a sense of frothiness, and when I poured it into a glass, fine bubbles appeared. The full-bodied and tasty flavor is followed by a sweet and sour aftertaste. A slight yellow color and a couple of clear legs.

Well, it's been ten years, hasn't it? The name comes from its own spring, which is designated as a famous water source. It is a very refreshing and clean sake. The top aroma is of cherries, and the attack is clean! Yet, it gradually develops a strong umami flavor and a gentle sweetness that spreads. The liquid is clear and colorless, and there are a lot of legs, although they are not clearly visible.
