22/06, cold sake, divided into three portions, over the course of a week. I personally think it's a slow starter. I think it's a slow starter... But the Jungin "Tojo Yamada" I had at the end of May was good right out of the bottle, so I guess it depends on the sake. I honestly thought it was a failure when it was freshly opened and priced. I don't have enough knowledge to talk about Aizan.

22/06 Cold sake Light and easy to drink. Acidic for an Akabu. I couldn't buy it and tasted a little, but I prefer "Natsukasumi" by far.

*Cold sake. I drank it over a period of about two weeks, but the change in flavor was minimal. I expected it to be classic and light in the image of Yamahai Honjozo, but it's quite melon. Sake with no flaws.

22/05 Cold sake I bought it because I saw it and had no choice but to buy it. Less sweet than the standard Tokujun. I drank it up right after opening it, so I felt a bit of niggah, but it might have changed if I had given it more time. I'm sorry to say that this is a new product, but I'd buy the Tokujun if I could find both in a line.

*Cold sake. To tell the truth, I bought it by mistake with "Matsu no Tsukasa" (sorry). The feature of this sake is sourness. Not sour, but high acidity.

22/05 Cold sake The strong acidity and a hint of sweetness, as if in harmony with the schedule, give way to an aftertaste that is really nothing at all. It must be easy to drink, but since I am not forced to drink it, I think it doesn't have to be this empty. Good branding and sake itself are two different things.

22/05 Cold sake Immediately after opening the bottle: No flashy aroma, moderate sweetness, strong niggah and firm sharpness. It must be delicious, but to be honest, it is not enough. Next day: It is difficult to verbalize what has changed, but I was surprised at how much better it tasted. The nigga seems to have receded and the umami has increased. Very tasty.

Cold sake immediately after opening, at room temperature after 2 days. I'm not sure if it goes well with Isobojimai, but I've never thought it tasted good after drinking about three different kinds. I was excited to drink it because of the super cool label, but the lack of volume was not enough, I was not particularly attracted to the ginjo aroma, and I felt the aftertaste was blurred. Maybe the brewery is not to my taste, or maybe I simply don't like Yamadanishiki.

22/03 Cold sake Stable Chochin. It is close to 5055 of the same "Shinshinshi", but this one is a little paler and has a stronger nigga. According to the description, the acidity is a little high (2.3), but I didn't feel it much. It is tasty as usual, but personally I think it is a little lower than other Chochin.

22/04 Cold sake Strong gassy feeling at first (bottle warmed?). I left it for a week and drank it, then it became slightly easier to drink. There is no doubt that it has beautiful qualities, such as a moderate ginjo aroma that is not too loud and a clear mouthfeel with no cloying taste, but it did not resonate with me.

Cold sake. The oriki is a little bit light, so it's more refreshing than I expected. The sweetness is moderate, which gives a good impression (I didn't feel much of the advertised "rummy" feeling). It doesn't have much of the gusto that you get when you start drinking it, but it has a wonderful, pleasant feeling all the way through. A refreshing sake with a refreshing label.

22/03 Cold sake Yamadanishiki" I was curious about because I liked "Omachi" of the same series too much. As it turns out, I didn't like it much. Maybe I don't like the small cleanliness and slightly high acidity. It has a sweetness, but is also elegant and refined when juxtaposed with the cleanness of "Gohyakumangoku" and the umami volume of "Omachi," which is the same quality as the disappointment I felt with "Nabeshima" Junmai Ginjo/Yamada Nishiki. Of course, I think it is a very nice sake.

22/01 with cold sake So called unfiltered raw sake Stable Chochin Really good no matter which one you drink! This sake may be a little acidic. But I don't mind. I can gobble it down, but it's dangerous because it's 18% alc.

*At room temperature Strong acidity. Not my favorite sake quality. I think it is the closest to "Akizuka Chishu" that I've had in the last 6 months or so. It looks like it might warm up, but I didn't try it because it was too much trouble.

*Cold sake 22/02 Sweet and fruity with a strong umami flavor. I don't know if my tongue is stupid or not, but I couldn't detect much of the "minerality" that people talk about when describing this brewery. Impression is quite similar to "Mimuro Sugi Hana-Kyun" which I drank last week. I am not confident in my ability to distinguish between the two.

There is no particular merit other than "the taste that I never get tired of drinking," but I can keep drinking it because I never get tired of drinking it. I would like to drink it in a bottle like a No. 4 bottle, not in a single cup.

22/03 Cold sake The hooks are so diverse - "low-purity", "Aizan", "unfiltered raw" - that it's hard to say which elements are related to which parts of the flavor. In any case, it is a very tasty sake to my taste. It is probably the closest to Chochin's Seikyu (Jungin, Yamada's 50) that I have had recently. It's reasonably priced, and if I'm so inclined, I'd like to try a different rice variety from the same line.

22/03 Cold sake I had high hopes for the junmai ginjo I had at the end of last year because it was so good, but the result was "not so much." Maybe the point is spicier because I don't like raw sake that much to begin with. The sweetness is moderate and the niggaz and sharpness are strong. Aroma is melon type? Not much umami. Not that there are any particular flaws, but there are no unique advantages either.

22/02 Left at room temperature for 2 weeks after opening the bottle. Perhaps I was a bit too prepared for the "Yamahai Honjozo" (my image was that of Kenbishi's Kuromatsu), but the taste was surprisingly gentle. The sweetness is moderate, the acidity is not noticeable, and the sharpness is not bad at all. I think it is the best sake for a mealtime drink. Postscript I tried to follow many comments that it warms up, but the attack was too harsh for me. On the other hand, if you think it is not good when heated, you should try drinking it cold. It is gentle at room temperature.

22/02 at room temperature It is supposed to be hiya-odori, but the date of manufacture is 22/02. I'm not sure. Is the only difference from the blue special junmai that the hanging rice is also Yamadanishiki? Not sure (same polish) It's a good sake with a nice sharpness, but it's a little too light, so maybe it's not what I'm looking for in a "noble" sake.
