22/02 Left at room temperature for 2 weeks after opening the bottle.
Perhaps I was a bit too prepared for the "Yamahai Honjozo" (my image was that of Kenbishi's Kuromatsu), but the taste was surprisingly gentle.
The sweetness is moderate, the acidity is not noticeable, and the sharpness is not bad at all.
I think it is the best sake for a mealtime drink.

I tried to follow many comments that it warms up, but the attack was too harsh for me. On the other hand, if you think it is not good when heated, you should try drinking it cold. It is gentle at room temperature.
