Purchased at Tottori station during a recent business trip to Tottori. Aged for 3 years. It has a slight color and a whiskey-like aroma and taste. It is a sake to be savored slowly and gradually. We enjoyed it with salty yose-nabe.

Dinner is called oden. It has a sweet aroma and a delicate, crispy texture. It is not as sweet as the aroma would suggest, but has a mellow rice flavor that comes through later. The alcohol content is moderate at 14 degrees, even though it is a pure sake. It has a modern and delicate taste that is hard to imagine from the Kawatsuru I drank more than 10 years ago. We enjoyed it with Himeji-style oden with ginger soy sauce.

Hi Ryu, nice to meet you. Kawazuru was brewed by the toji of "Amami", which is my favorite sake brand in Kagawa. I think it is a good sake for Kagawa. There are many other delicious sake brands in Kagawa, such as Etsukaijin and Koryo.

Hyogo's favorite brand. Unlike the atmosphere of the name, it has a sweet aroma. It has a firm sharpness and a smooth taste on the palate. It has a pleasant aftertaste and goes well with all kinds of food. I enjoyed it with pork cutlets, lemon, and tofu chikuwa I bought on a business trip to Tottori.

Hiyoroshi in autumn. It has a mild aroma of white grapes and a tight, gassy feeling. Although it is hiyaoroshi, it is not heavy, and the sense of rice is not so strong. It has a clean throat and a pleasant bitterness that follows afterwards. We enjoyed it with nigiri sushi from Sushiro.

This sake is from the same brewery as the one we just drank the other day. It has a calm ginjo aroma and a good amount of gas. It has a refreshing and clean taste. The rice flavor is not overly assertive, and although it is not as showy as the Musical Instrument Masamune, it has a mellow finish. A heavy favorite from fall to winter, served with oden.

The middle day of a three-day weekend during an approaching typhoon. Purchased at the sake shop Yamada (original product) in my favorite TSUTAYA home appliance. The specs were not disclosed. The specifications were not disclosed because they said, "I want you to taste it with your senses. The aroma is reminiscent of green apples. It has a mellow rice flavor with a crisp texture and no cloying taste at all. It was served with shime saba, assorted fish paste, and takoyaki.

The second autumn sake. The aroma is mild. The mellow texture on the tongue fills the mouth with a mellow flavor. It has a firm aftertaste and seems to go well with all kinds of autumn flavors. We enjoyed it with our first oden of the year.

Autumn sakes while listening to the sound of insects. The sweet and sour aroma is also complex. It can be said to be refreshing, but it is a bit blurred and lacks impact. We hope that the depth of the flavor will increase as the day goes on. We enjoyed it with grilled Hida beef, which we received as a tax donation from the hometown of Gifu.

Summer vacation starts today! I have been curious about this instrument Masamune. Sweet aroma like muscat, with a light gasiness. The cool texture on the tongue is also firm and rice-like. This specs for a honjozo. Great cosiness. We enjoyed it with sashimi, yakitori, and grilled prawns.

It has a fresh, pear-like aroma. As the name suggests, it has a light, gaseous taste with a refreshing aftertaste. With its exquisite balance, this sake can be enjoyed in any season. We enjoyed it in an air-conditioned room with a Japanese-style broth-based pork hot pot.

I was curious about this brand because of the atmosphere of the label. Little to no aroma, but a bit of a bonded smell. It has a classical taste that does not pander to trends. It is said to be a sake that shows various faces depending on "time, temperature, and contact with the air. I want to savor it slowly, little by little. We enjoyed it with some izakaya menu items such as edamame (green soybeans), shime saba (mackerel), chicken kara (chicken bones), and beaten cucumber.

My first Fukuoka sake. It has a fruity aroma and just the right amount of gas. It is Omachi, but perhaps because of its low alcohol content, it is just right without being too sluggish. It is a good sake to get drunk comfortably. We had it with sashimi of tuna and thinly sliced pork with Japanese summer vegetable sauce.

Stylish label, not unlike the moon after the rain. It has a sweet melon-like aroma. In the mouth, a pineapple-like sweet and sour taste fills the mouth, and the punch characteristic of Omachi is also mitigated. The aftertaste is clean and pleasant. We enjoyed it with fatty bonito sashimi and pork kakuni.

Summery blue sky and iridocumulus clouds on the label. Refreshing aroma like rumenes. When you sip it, you can feel the pleasant gas and the moderate sweetness of the rice. We enjoyed it with boiled bitter gourd and fried tofu (lemosko).

The summery label is perfect for the day of Risshatsu. The sweet ginjo aroma is drier than expected on the palate. The taste is refreshing and crisp, just like summer. It was served with sashimi of kinmedai (sea bream), also from Kochi.

My first sake from Ibaraki. It has a faintly sweet aroma. When you take a sip, you also feel a slight gassy sensation. The mouthfeel is dry, but the rice flavor gradually fills the mouth. It was served with freshly harvested bamboo shoots stewed in chikuzen (bamboo shoots stewed in soy sauce), which is in season now.

Found them in Hiroshima too! Spring pink label. Refreshing aroma, mild gasiness. The balance of riceiness and acidity is good, although I did not feel that much citrus. I had it with seared oysters and a bowl of rice topped with seafood and shirasu.

To celebrate my son's success in passing the high school entrance exam, I toasted him with Seikagami Gen, the best local sake in Hiroshima. (Passing the exam is not a dream!!!). It has a calm but full aroma and a smooth texture on the tongue. And a soft and gentle aftertaste. Not flashy at all, but always a delicious sake. We had it with assorted sashimi (tuna, sea bream, octopus) and fried chicken.

Today's dinner was decided to be tempura, so I hurriedly bought it at a nearby Aeon. It is fermented with natural yeast and is bubbly and slightly cloudy, like a spring haze. The slight cloudiness is like a spring haze. The aroma is subdued and there is a hint of bitterness from the gas. We enjoyed it with tempura of spring vegetables such as kogomi and rape blossoms.
