Junmai Ginjo, Nama Sake. This is the one for this year's Nama Sake! It has such a wonderful balance. The sweetness and acidity, which are the good points of nama-zake, are of course maintained, and the aftertaste has a great sharpness. Personally, I really liked this bottle.

On the left is the Junmai 70%-5% Polished No Excess. The aroma is not so strong, but when you drink it, you will find that it is fruity, just like grapefruit! The fact that it is not sweet at all is typical of Junmai sake. It is recommended as an introductory sake for women and those who are not good at sake. On the right is Junmai Assemblage, a dry junmai sake. It is very easy to drink and has no peculiarities, so it scored 100 points as a food sake.

The Abe Brewery is close to my parents' house, but to be honest, I had never heard of them until recently. I had never heard of the brewery until recently, when I saw it in the media and picked up a bottle at the right time. It has a slightly fruity aroma, a delicious flavor, and a slight acidity that keeps you sipping and sipping. It is a sake that can be enjoyed not only as a mealtime sake, as recommended, but also on its own. We also enjoy it with "Banzai Sansho" from Iwatsuka Seika, which is also from Niigata Prefecture.

It has been a while since my family has had a chance to get together and this is one of the bottles brought during our stay at a hot spring resort in Toyama. Everyone loves it so much they bring this one every time (laughs). It has a relatively sweet taste. We were going to drink it with our meal, but since all we had was fish, we decided to have it later in a hurry. When served by itself, it has a very luxurious, full-bodied, sweet flavor. Personally, I prefer to drink it cold because it tastes a bit sweet depending on the temperature.

It is brewed with beer yeast, and the alcohol content is not only 9-10% but also 15%, and the sweetness and umami are very well balanced. When you put it in your mouth, the fresh acidity and sweetness stimulate your tongue clearly, and the bitterness is not noticeable. I saw a bottle I'd never seen before at a sushi restaurant, so I ordered it. "It costs 4,000 yen a bottle. but I agreed to it out of curiosity. It hurts my pocket... (laughs) The ginjo aroma is unobtrusive, and the sweetness and flavor gently envelop the tongue the moment you put it in your mouth. When it reaches your throat, a strong spiciness asserts itself crisply, and at the end it disappears comfortably. It was one of the best sake I drank this year. They don't sell it wholesale, but only through the internet, so if you're interested, why not try your hand at it?

It is one of the limited small shipment. It was given to me through a friend. From the moment you open it up, you can smell a rather peculiar fermentation smell, like pickles or soy sauce (my friend said it smelled like a freshly opened plastic sheet or poison ivy). When I put it in my mouth, the sour taste that I have never experienced before stimulates my tongue. It stimulates the tongue. The similar stimuli are heshiko and iburi-gakko. I thought the -77 sake level was a joke, but it seems to be true. I've never seen a sake meter before, so I don't know, but is it really that long? LOL! It's a very distinctive bottle, and I don't think it will be popular with the cognoscenti. I love the original Akishika, but even if you've had that one before, it's best to keep in mind that it's a completely different brew. Anyway, it was a very special sake and a very good experience.
