2021.2 50% Yeast K901 It's a bit pungent, but not too bitter, and it's very mellow. But the cork on the bottle of Laughing Shiki was so hard I had to use kitchen scissors to finally get it open! I couldn't even push the stopper all the way in. It's very well made!

2021.03 50% Shiga Yamadanishiki Fruity on both the nose and the palate, but with an impressive astringent fruitiness! It's not very spicy, and the bitterness is about even less noticeable. There is not much spiciness, and even less bitterness. I was able to buy tuna at half price today, so I'll drink it with this!

2021.03 50% Watarifune No.2 In-house 620 yeast The word Emishiki on the right shoulder of the label is kinda neat! Nice fruity aroma! Slightly sweet with a hint of acidity. It's not too spicy and not too bitter. More than anything, the delicious taste of the fruit spreads in your mouth. It makes your mouth start to laugh! It's a delicious sake. It would be a shame to eat something crazy and have this flavor be erased, so no snacks for now!

21.3 50%. A 50% Junmai Ginjo. It is fruity and refreshing, with a moderate amount of sweetness and spiciness that gives it a solid taste. We had a chance to try many different kinds of sake at the tasting and sale, but since we were there, we decided to go with the raw version. Today we are going to have grilled barracuda.

20.8 55%. A fruity aroma and mouthfeel, with a pleasant roundness in the mouth, as if you were enjoying a soft peach. The slight pungency and bitterness in the aftertaste is not too much to worry about. It's delicious! I started drinking it with fried locusts.

Not quite fruity, but smooth on the tongue like a yellow peach. There is no bitterness or pungency left behind, and it has a clean aftertaste. When you put it in your mouth, you can taste something like fruity rice, which makes you want to drink another cup. They were having a tasting sale, so I had a chance to try a few different ones, and decided on this one, which had a distinctive flavor! They also had sake lees, so I bought those as well. This one was a dry sake lees with no sweetness.

It wasn't to shuwa shuwa, but the rice was still firmly mashed and the taste was rich and delicious. The sweetness and pungency were strong, and the tanginess was like sweet sake. 21.2 55%. The aroma is not very perceptible. The sourness is almost imperceptible, and the gentle sweetness is felt first, and the faint bitterness and pungency are felt as accents later. It's a kind of gentle sake. I got three kinds of sake at the tasting sale and decided to go with this one, but the Junmai was 70% and had a lot of flavor, and the Junmai Super Dry was firm and dry, and these were also good. Today, we will drink it with a medium-sized piece of bigeye tuna.

2020.12.28.K 50% Yume Ikken from Fukuoka Prefecture Slightly muddy. It has a fruity aroma and a slight fermentation aroma. It has a sweetness to it, but it is masked by the pungency and acidity. A pineapple aftertaste remains. It's been a month since it was made, so I'd like to try a freshly made one. We didn't have a chance to taste it, so we talked a lot about it and decided to try the Nigori. Next time, I'll try Gin no Sato!

2020.12 55% 14.5% Yamadanishiki Slightly sweet, and a little sourness that feels refreshing. It has a kind of savory aroma. The website says it can be served cold (7-12°C) or warm (42-48°C), so when I tried it warm, the slight sweetness disappeared and it gave me the impression of a hot Yuki-Onna. I think I'll buy a sake bottle set. 2/1, the 5th day. What do you know, the aroma is changing to mellow, and it's starting to smell like grapes. This is delicious!

2021.01 55%. They were having a tasting sale, so I had a chance to try many different kinds of sake, and I decided to go with the Junmai unfiltered undiluted sake. I thought it had a nice aroma and it was 55% polished rice. It smells like pineapple, and when you drink it, it has a nice sweetness and acidity, with a caramel-like bitterness and some spiciness that lingers. Everything here was delicious.

2020.12 Sei 55%, Sun +3, A 1.4, Acid 1.6, Kumamoto 9 yeast The aroma is sweet and gorgeous, with hints of banana and rice. When you drink it, it is like caramel, mellow, a little bitterness and sweetness is good. I also bought some sake lees from Daiginjo. I recently discovered that it's good to spread Sakekasu to the consistency of yogurt and eat it with a spoon like yogurt without adding anything. It becomes delicious from about the next day.
