Tokeisou
Production date: December 2020, Polishing ratio: 55%. As soon as it is opened, it smells like peaches. When poured into a glass, a small amount of foamy bubbles adhere to the surroundings. The taste is mellow and fruity, with a slight sweetness and a pleasant bitterness. I drank quite a bit of this with peanuts while wondering what would go best with it!

2021.1 60% 15 degrees Same as Special Junmai, 60% polished rice. A little bit of gas comes out when you open it, it's the same, but when you pour it into a glass, a slight fizzy foam sticks around. It has a sweet aroma like cotton candy, and when you drink it, it is slightly sweet and slightly sour, kind of like fresh water. It is interesting to drink it alternately! I'll drink it with salmon today.

2020.12 60% 15 degrees I found this one at the end of the year and bought it. The moment I opened it, the gas was gone! The aroma and taste are slightly fruity. The aroma and taste are slightly fruity, slightly sweet and sour, with a nice flavor. The rice flavor is also very gentle. I think this would be good with sashimi. However, I am looking forward to making pork shabu today, although it is not ready yet.

It has a slight color. The aroma is faintly fruity. When you drink it, you will feel a slight carbonation, a soft sweetness and a sourness first, and a slight bitterness and pungency in the aftertaste. I think I can feel the aroma of the ears of rice on the label. It has a gentle taste, which is quite nice. Ah, now I want to eat some tuna sashimi!

This is one that I walked for about an hour to buy today to get some exercise. The color is slightly yellowish. The aroma is faintly like ripe pineapple. When you drink it, the bitterness of the slight carbonation and the pineapple-like sweetness spread gently in your mouth. It seems to be highly viscous. It gives you a taste of sweetness along with bitterness without being too sweet. I'd like to try the other ROC Series as well.

Rice polishing ratio 50%, 100% sake future Sake degree -5.0, Acidity 1.4, Amino acidity 0.8, Yamagata yeast The aroma is a little like honey. It has the freshness of eating a sweet tangerine. It also has a bitter taste as if you bit the skin too. This one's good when you're a little tired! I'm in the mood for something refreshing to eat. Carpaccio, maybe!

Rice polishing ratio 60%, 100% Miyamanishiki Sake degree +2.0 Acidity 1.4 Amino acidity 1.1 Yamagata yeast. I wanted to drink something whitish, so I opened this one. At first, from the supernatant, the aroma is soft and peachy, and when you drink it, the taste is rather bitter and light. When I mixed it well, the carbonation became frothy, giving the impression of a cider somehow. The bitterness is supported by the sweetness, and the taste is refreshing. I'm drinking it with mackerel today. It seems to match the flavor quite well.

I bought this one because of its good cost performance at 2,000 yen for a tasting. Rice polishing ratio 45%, five hundred million goku Slightly sweet, pungent and bitter, with a hint of grape aroma. Slightly sweet, pungent and bitter on the palate with a solid taste. The centrifuge of the Junmai Daiginjo from Gohyakumangoku was a bit expensive at a little over 3,000 yen, so I didn't go for it, but it was also rather gentle and tasty.

It was on sale for tasting, so I tried everything from special junmai to junmai ginjo, and I chose this one. When I opened the bottle and poured it out, it smells like a grape. When I drank it again, it had a rather light flavor. There is not much sweetness, but it is dry, with a little bitterness and pungency, and a faint scent of grapes remains. Today's dish is grilled Spanish mackerel.

It is not fruity, but the other side of the taste. Yoshinogawa's Junmai Ginjo was Koshi Tanrei, but this one is Gohyakumangoku, which seems to be different from the way it was made. However, they are both delicious. Today we had it with sashimi of tuna.

Slightly gorgeous aroma. There is not much sweetness, but the taste is thick, round, and thick. Sourness, bitterness, piquancy, and a slight sweetness provide a good balance. There's a taste that makes me wonder if it's yeast. After drinking this sake, I'd like to have something refreshing. It's pretty good. I'm waiting for chestnut rice today.

Yellow peach aroma. The moderate sweetness and a bit of bitterness give a refreshing impression. The aftertaste is still like after eating a peach. It's quite tasty! In the meantime, I started drinking the persimmon seeds without the peanuts.

I bought it and left it in the fridge for a day before opening it and it didn't seem to be fizzing. It felt slightly fizzy, but I did notice some bitterness from the carbonation. The aroma was refreshing, with a pear-like feel. There is a slight sweetness to the drink, but the bitterness seems to counteract it. I couldn't resist buying one at the tasting sale, but it was still delicious. I started drinking it today with a scallop-style kamaboko.
