Rice polishing ratio 50%. 16° Sake degree +10 Is this a Junmai Daiginjo? The label information says it is. I can understand why it is dry, but I couldn't catch the fruity taste. It doesn't have a smooth feel to it, and the alcohol is very strong. It was a sake with a lot of impact.

Rice polishing ratio 60%. 15 degree Dewa Brilliant This is a refreshing sake with a sweetness that you might expect to have a strong sourness from the use of white koji. It's juicy, and you can't feel the strength of the alcohol, so it's easy to drink. I think it is perfect for summer drinking.

Rice polishing ratio 91% of the wonder. This is why it is called "Kunoichi". Alcohol 16°. I've had other brands that were 90% polished, but I think they were hard to drink. I bought it thinking, "What kind of low-polished rice is that? It's delicious! The rice is full of flavor. The taste is good too. But at the end, I felt a fruity aroma coming through my nose. No sourness is felt. The label says that it is cut and clean. But I felt that the aftertaste left a little fluffy in my mouth.

In the beginning, the overall taste was ho-hum and light. The acidity was not that strong, and the sweetness of the rice was not strong either. To be honest, I felt it was not enough, but as the day went on, the acid came out clearly and the taste became stronger.

I'm so disappointed. I thought I had bought it at the regular price, but it was about 500 yen higher and at a premium price. It's an easy drinking sake with a beautiful taste and a good amount of sweetness. When heated, the sweetness expands somewhat, and when cooled, it becomes crisp. Basically, it is dry.

16°. I had a bad feeling about muddiness, but I saw this product in a magazine several times and was curious about it. When I opened the bottle, I turned the top and bottom of the bottle over several times to make sure it was evenly distributed, and carefully opened the bottle. I thought it would make a loud popping sound, but it was surprisingly easy to open. It was sweet. It's almost like sweet sake. The alcohol is not that strong. When you put it in a glass, you can feel the gas coming out of it. That gassy feeling gives this sludgy liquid a refreshing taste, and is the reason why I keep drinking it despite the sweetness and sludgy taste.

100% Osan Nishiki from Toyama Prefecture Rice polishing ratio 70% Alcohol content 17 Sake degree +2 Acidity 3.3 Oh, is this label the number 8 on the tarot card? The yeast No.8 is fully pushed out. It has a gaseous feel to it, just like Arabashiri. However, if you pour it into a cup and leave it for a while, it will disappear. The aroma from the bottle was banana-like, but when I drank it, it had a good amount of sweetness and a refreshing acidity that filled my mouth, so my impression was of a green apple. Delicious.

However, as the day goes by after the bottle is pulled out, the sweetness that comes at first disappears and the acidity takes over. At the end, the aroma of rice is fluffy. The sharpness is good.

16° Rice used: 25% Yamada Nishiki, 75% Saga no Hana Polishing ratio 60%. Just after opening the bottle, the sweetness was strong, but as the day went by, the sourness came out. At the beginning, when the sweetness was strong, there was a solid sweetness with a sense of maturity, and the aftertaste was a little rough. When I drank it later, the sweetness came first, but the sourness came soon. After that, the sweetness of the rice is not strong, but it is fluffy. The warmer it is, the more the sweetness spreads.

Polishing ratio 50%, 16°, 100% Yamada Nishiki, Hyogo, Japan. Sweet. The aroma is melon? The sweetness is so strong that it makes you feel like a high-class muskmelon. It has a refreshing sweetness that never gets tired. At the end, the sweet aroma goes through the nose with a little lingering fluffiness, but a light bitterness on the tongue finishes it off. A couple of days after opening the bottle, there was no noticeable change in taste.

16° Sake degree +3.9 Acidity 2.0 Rice Polishing 60%, 100% Tamasakae from Yasunogawa, Shiga Prefecture It has a nice label. At first glance, the woman on the label looks glamorous, but this sake is surprisingly calm. I wonder if she is actually a ladylike woman. There is acidity and rice flavor, but it is very well balanced and comfortable sake. The sweetness spreads softly in the back end. It is delicious.

15°C 100% Yamada Nishiki Rice polishing ratio: Koji rice 50%, Kake rice 60%. The acidity stands out. It is like a lactic acid bacteria drink with alcohol. At the end, there is a light bitterness that finishes off the drink, so unlike the original lactic acid bacteria drink, the sweetness doesn't linger in your mouth and you can continue to enjoy it.  It is made by using all local products, and it is a brewery with a strong commitment.

Is it correct to use the regular sake category? I'm sorry if I'm wrong. 15-16° with brewing alcohol. It has an austere label, which is hard to find nowadays. You can feel the fullness of the rice and the sweetness. However, the sharpness of the taste is crisp. The sharpness was surprisingly good.

Rice polishing ratio 65% 18 I heard that sake brewing was popular in Mifune-cho, Kumamoto Prefecture, until the Meiji period, but it seems that everyone has gone out of business. It's a pity. It was made as a revival project and received as a hometown tax return gift.  A solid sake with a sense of maturity. The sweetness of the rice comes through in the aroma. The sweetness and fluffiness of the rice spreads in the mouth, but the bitterness comes in at the end and tightens it up.  When I added ice to the drink, the acidity came out a little bit, and it felt more refreshing. I'm going to drink sake so that no more Japanese sake breweries go out of business.
