This is a 13° Aizan from the closest brewery to the stars in Japan, the Yukawa Sake Brewery in Nagano Prefecture's Kurouemon 16th Generation Kurouemon Namikoshi Junmai. This brewery is a talented brewery that most recently won first place in the Junmai Ginjo category at the IWC for its raw yeast Miyamanishiki. This sake is made from premium Aizan rice with junmai specifications (65% milling ratio) and sake brewed using the sake yeast, and is a low-alcohol sake with 13% alcohol. It is fire-aged. The aroma is mild, with a balance between the soft sweetness of Aizan and the acidity of the sake's yeast, and a rich umami flavor without any sharp edges. It is very easy to drink and delicious. The 13% alcohol content also makes it easy to drink and it goes down smoothly. I tried heating it up to lukewarm, but the soft sweetness was more pronounced.
