at Nihon Shu-tsubaki
This is a hopped bloc of rice and agave served with the pairing of the first dish, a yellowtail nameko.
I had this sake at Young Dawn a while ago and found it a bit of a shock.
With nigori, the aroma is usually masked compared to just the supernatant, but this one had muscat? Hops?
Sweet, delicious, and super fruity!
Due to the sake brewing license, it contains some secondary ingredients and is a dobrok, so it is not sake by the standards, but it is so delicious that it doesn't matter.
As for the pairing, the fish and sake were synergistically delicious, and the fishiness of the fish was wrapped up in the sake.
