This sake is made from an ancient rice called purple-black rice and has a light-bodied red wine-like color.
The taste is also wine-like? It is sweet and fruity with a strong acidity.
The fig sauce in the dish also had acidity, and the sweet and sour of the sauce and the sweet and sour of the sake went very well together.
It was the best pairing of the day.
