As it was my birthday last night, I opened a bottle of Ash that had been sitting for a year 🍶.

A junmai sake from our favorite Musical Instrument Masamune that tastes great no matter what you drink 🍶.
It has a sweetness with a hint of muscat and rummy, and a slight effervescence that is typical of instrumental sake.
It is light and easy to drink with a low alcohol content of 13 degrees.
The "Niiida no Gosan" (The Five Sons of Niiida, the Master of the Niiida Province)
For some reason, only one tank of this sake had lactic acid bacteria working actively, resulting in a threatening acidity level of 5.0.
The firm lactic acidity is like a white wine made from rice. It also has a nice sweetness and a mysterious taste 😊.
Shinmasa Kojo-shu, Yonotori
22PHT-10 Yonotori that has been aged for a year.
Of course it's sweet, but thanks to the moderate acidity, it's not unpleasant at all.

Suitama is made from Yamadanishiki grown in cold regions by local farmers.
The taste of Yamadanishiki is in the mouth with a smooth mouthfeel that is typical of Suitama. Unlike the previous reputation, it has just the right amount of bitterness and sharpness that I like.
It is delicious.

Miyazumi Yeast Mutenka Junmai Namaisho
This sake is fermented in the natural environment of the brewery, which is a very difficult task.

This is my first Hizirizm🍶.
From the first touch of sweet soda, to the fresh acidity of the white malted rice brewing and the sharp bitterness at the end.
It is 12%, so it must have been great to drink it guzzling on a hot midsummer day.
