Suitama Special Junmai Sake We found Suitama at Nishiki Honten for the first time in a while. It has a very natural sweetness and fruity juiciness with a mild mouthfeel. It's like drinking Hanayu or Jyushiyo. Delicious.

Gagakuyo Gekka I couldn't help but buy the Garakudai Silver Label 🍶. The first touch is classic amino acid derived umami, followed immediately by moderate sweetness and gas. It could go well with any meal. First time for me to taste it. Delicious.

Seikyu Soma Dori Junmai Akkatsu Nigori Uma Uma Uma We bought some delicious horse sashimi at Aizu Sakashita, so we went to nearby Gonoi Sake Brewery and had a glass of our favorite Sama nigori (nigori). It has just the right amount of sweetness, moderate acidity from the white malted rice, and a gassy feeling that is typical of Samma. It's so good, not too sweet 😫👍!

Mutsu Hachisen Natsu Doburokku, Active Nigori Sake The last summer sake in the fridge 🍶. The overflowing gas took 3 minutes to open and close the bottle. It is sweet but dry with a clean aftertaste. You can drink this summer sake with low alcohol content.

Tedorigawa Daiginjo Nama Sake Arabashiri A former boss of mine who lives in Kanazawa sent this sake to me and I opened it. Despite the crispness and appleiness of the first sip, it has a moderate sweetness, a slight bitterness, and a sharp aftertaste, making it perfect for a mealtime sake. Delicious! AZAZAMASU😊.

Aizu Miyazumi Junmai Ginjo Fukunoka Hi-iri I bought this pink label when I went back to Aizu. It is 50% polished rice of "Fukunoka", a new variety born in Fukushima. It is a moderately sweet sake with no cloying taste and can be drunk like water.

Seikyu Soma Junmai Ginjo Yamadanishiki My favorite sake from Shirakawa, which I bought when I went back to Aizu. It has a beautiful balance of sweetness and acidity without any clutter, just like a Junmai Ginjo made from Yamadanishiki. It has a juicy berry taste and a gasiness that is typical of Soma. It's so delicious 😫👍

It has a firm fruitiness, followed by a superb balance of sweetness and acidity. Although it is a pure sake, it has a smooth taste and the bottle was emptied in no time. Delicious!

Urakasumi Zen Junmai Ginjo 50th Anniversary Logo I don't mean to be rude, but I don't remember it tasting this good. According to their website, they've changed the heat treatment to a pastiller method and have been keeping the freshness by low temperature control in bottle storage since 2021. It's amazing that they are still making improvements. Delicious!

The flavor of Manamusume rice produced in the prefecture can be felt well, and it's delicious. After all, balance is important!
