This year's 57th sake is Shiragiku from Kochi Prefecture.
It seems to be made by aging Junmai Daiginjo in wine barrels, so it is slightly pink and the aroma is a bit like strawberries.
The 51st sake of the year is Tenmei MITSUGO "AQUA" from Fukushima Prefecture.
The slight foaming accentuates the freshness. The acidity is also very effective, making it a good sake for a meal.
This year's 49th sake is a Koko Junmai Daiginjo from Chiba Prefecture.
It's the first of the twelve signs of the Chinese zodiac, so I thought I'd start the second half of the year with a fresh start.
The pace is about eight bottles a month.
GOZENSHU9 (Okayama Prefecture).
It has the unique spread of Junmai-shu and goes well with unagi. But there is a gap between the refreshing package and the sake.
