A rare variety of sake rice in Fukui Prefecture. Sake rice, Kuzuryu No. 6 yeast. It is said to be very weak in disease resistance and difficult for farmers to produce. I wonder how it tastes 🤔. Color -> Almost transparent. Aroma →It seems to be a modest Junmai sake. A little melon. Taste →slightly sweet and spicy, with a lingering rice flavor 🫢Tasty 😋. A solid food sake ‼️

I personally love Kitajima Sake Brewery's brewing ❤. The image of the brewery always produces something irresistible to lovers of food sake. As you can see in the picture, the concept is good. It's not just about making a delicious nigori sake, but also about the nutritional value. I take my hat off to them from the concept. 🙇‍♂️ Color →White as a matter of course. Aroma: Aroma typical of doburoku. Taste →Many nigori sake that are made as a food sake tend to be bitter, but this one has just the right amount of sweetness. Yet you can perfectly taste the umami of the rice 👌. The best part is the texture. This silky feeling of straining is also the best 👌⭕️ Perfect concept and taste😍. Thank you for this wonderfully delicious dark nigori sake 🫡✨

Is it called satsukimidori 🤔? Yamahai Junmai Slightly Aged Nama Sake I don't know what the rice is, but it's 70% polished rice. Color -> almost transparent Aroma→Modest, but with a hint of melon? Taste →Freshness typical of nama sake 🫢. No inherent flavor typical of Yamahai, very clean taste, total deliciousness 😋No complaints about the taste: ❤️ The standard Yamahai from Mitomiku tastes like Yamahai, but this one is exceptional. It's a must-try, so please try it: 💁‍♂️✨

Gekkeikan is a major Kyoto-based company. I was curious and bought it at the supermarket! I don't know what sake rice it is, but it has a 78% polished rice ratio. It is quite unpolished for a major company. Color: clear Aroma →Quite subdued. Taste →Not sweet, but not spicy either. The touch on the tongue is smooth! The rice flavor comes in slowly! I think they lowered the alcohol content too much 🤔.

Sato Shuzo is well known for its representative brand, Kohama. When I climbed Mt. Ibuki, I bought this sake at a store in the parking lot as a commemorative gift. Is it an unfiltered unpasteurized sake made from 60% Shiga Prefecture's sake rice, Ginbukietsu? 🤔. It says so on the kiosk but not on the package😅. Color → light kohaku color. Aroma -> Pale cemedine aroma with a nice fragrance. I wonder if it's called that? I can't compare it to a fruit. Taste →From the beginning to the end, there is a strong and lingering taste 🙄It's really delicious 😋. This is a good one 😏✨

Nama yeast, brewer's yeast, O.K. Wooden vat brewing I think this sake can be called a true taste of Niida. It doesn't say what rice is used 🤔. At any rate, the rice is polished to 80%. The NIIDA head family is committed to supernatural brewing. It's not that natural is good, it's simply delicious 😅. Color -> Slightly kohaku color. Aroma: Modest Junmai sake-like aroma. Taste →As expected, it is delicious. This is the best taste as a food sake. I like it. ❤️ It's a versatile sake that can be served cold or hot. This is one you can't go wrong with ✨

55% Yuyamanishiki produced in Toyama Prefecture Second fermentation in the bottle by my favorite maker, since Gyokusendo Shuzo's "Mukaze Centipede" was the best. I bought it at the Ibukiyama Terrace while climbing Mt. Color → cloudy white. Aroma: Second fermentation aroma with a bitter taste. Taste →As expected from the aroma. It is a sparkling wine with a slight bitterness and is intended as a food wine. Since there is a lot of unrefined sake, it can be chewed a little. The effervescence is quite strong 🫢. Great effervescence.

Comparison with Yamahai. Color →Dark kohaku color. Darker than Yamahai. Aroma: Muscat with woody aroma. Taste →Well, it is easier to drink than Yamahai. The complex flavor is still there. I recommend the sake with a sake yeast yeast yeast yeast yeast over Yamahai. 💁‍♂️✨

Mai Bijin is a controversial beauty representing Fukui Prefecture. Some people call it Maibi. Buy it for the scary things. Color → light kohaku color. Aroma → Smell of watery wood. I don't know how to describe it. It's a strange smell with a hint of water. Not my favorite aroma. Taste →Punch of strong taste at the beginning and at the end 🤜 so strong that it makes me laugh. I guess this is a love it or hate it 😅 anyway, it tastes amazing. Compared to the aroma, the taste is sweeter and surprisingly goes well with food 😏✨Can't wait for you to try it.

Surprisingly, I hadn't had any sake from Gohyakumangoku before, so I bought it: ‼️ Color → clear Aroma → quite subdued Taste →Slightly umami and dry in the throat with little lingering aftertaste. It is a sake that does not interfere with food.

Pesticide-free brown rice with 100% milling ratio. In other words, the rice is not polished. Brown rice as it is. The rice is Koshihikari, the king of rice rice. And the alcohol content is 11%. And secondary fermentation in the bottle. The taste is unpredictable. Color →Dark kohaku color with a hint of nigori (lol) Aroma →When you smell it, wow ‼️ strange aroma ‼️, it has some grapefruit feeling. Taste →Freshness is strong. Slightly carbonated🫢. Strong acidity‼️ taste is also unique and I think this is controversial. I like it❤️(lol) I still think it tastes like grapefruit too🫢. It's pretty unique 😅I found an interesting drink 😏❤️

I found the best 👀! I've been curious about Terada Honke, which is particular about its brewing for a long time, so I finally got around to drinking it. I purchased it at Sazanami Sake Shop in Hikone City! Malted Rice type : Miyamanishiki, Yukikawake Kakemai: Miyamanishiki, Yukikake, Koshihikari Do they use different types of rice depending on the occasion? 🤔 Color →Dark kohaku color. Aroma → Unique aroma that is somehow different from that of old sake. It has a mysterious aroma like grapefruit. Anyway, the aroma is strong. Taste →From the very beginning, it has a strong taste. It tastes like rice, or perhaps it is the umami of rice, but it has a unique flavor just like the aroma. It has a strong aroma and taste, and is delicious even when heated. It's perfect 😋! Perfect 💯. One sip and I'm a fan 🤤.

This is not just a cross sunrise either, but a comparison of three different types of drinks. Wakanami -> Junmai-shu 65% Yamadanishiki? Not as flashy as the junmai ginjo we drank before, a little heavier setting. Wakanami Type 2→Polishing ratio 55%. Wine-like acidity and lightness. Yeast is Fukuoka dream yeast #2. Goes well with fish and cheese, but not invincible. Juji Asahi→An old sake made from Gohyakumangoku, which is strong in cold regions. The color is a deep kohaku. Mild on the palate and in the middle, with a spicy feel in the second half, which is typical of old sake.
