Wakanami -> Junmai-shu 65% Yamadanishiki? Not as flashy as the junmai ginjo we drank before, a little heavier setting.
Wakanami Type 2→Polishing ratio 55%. Wine-like acidity and lightness. Yeast is Fukuoka dream yeast #2. Goes well with fish and cheese, but not invincible.
Juji Asahi→An old sake made from Gohyakumangoku, which is strong in cold regions. The color is a deep kohaku. Mild on the palate and in the middle, with a spicy feel in the second half, which is typical of old sake.
