It's very cold in Hokkaido. It's the season for hot sake! (Even in midsummer, it's still hot.) (It's always hot in the middle of summer, too.) I don't get a chance to drink Hokkaido sake in Honshu. But in Hokkaido, you can drink a lot of Hokkaido sake! Is it any wonder? Kita no Kishiki, hot sake, about 50°. It's gentle! Umami and acidity! And there is a long, gentle aftertaste. Recommended for beginners of hot sake. Happiness

It seems to be a very popular and hard to buy sake. My husband gave it to me as a birthday present! It's not so much that you have to be careful to open the bottle, but it's still alive. The unrefined sake comes to the surface! And the shuwa shuwa is refreshing. The pitch is very sharp. Moderate acidity and sweetness, with no cloying taste! No wonder it is so popular. I would like to recommend this sake to those who are not good at sake to try it as an introduction.

I was recommended this Azumatsuru, which had been left to sit for a while after the bottle was opened and had started to bloom around yesterday. I made a rough request for a warmed, acidic, umami type sake. It's so delicious. Full of rice flavor. It has that flavor of being a traditional sake brewed in a sake brewery. It was so good hot that I ordered it cold as well. I prefer it heated because you can really taste the flavor, but it was very tasty cold as well.

It has a clear - soft acidity and sweetness - then crisp and spicy. I thought it would be gentler, but when I tried it with seared sea bream, it turned out to be perfect with sashimi. A fun collaboration sake. I hope this kind of collaboration will be a gateway to increase the sake population.

I didn't have time at all, but I saw a 10 minute window of opportunity and ran! Since I call myself a nigori ai, I can't miss this one. Ugh...it's good. It's delicious. It's the pride of my hometown. Mellow rice flavor with a gentle savoriness. The lingering taste of umami. It brings out the best of Gohyakumangoku. There is no lingering alcohol taste, and of course no sweetness. I don't know how to describe this taste. Anyway, I️ would like to try this sake without any snacks for the rest of my life...‼️. Happy drinking!!!

I love Shiga sake! Nigori, suitable for warming up! Nigori is my personal seed. But it's also true that many sakes are sweet. This one is just as good for warming up, a super collaboration of spiciness and the gentle sweetness of the moromi! A few weeks after opening the bottle, I'd say. The alcohol content is low at 15% even though it is a draft sake. It has a punchy taste! The acidity that you like and the spiciness come at the same time. The spiciness remains on the tongue afterwards. It is a perfect match for anything. I can only imagine that it would go well with pressed sushi with swordfish.
