I love Sogape 🩷. They have a variety of different yeasts, but I like them all so much that I can't say which one is the best. This #6 yeast version is my favorite among them: ‼️ I will try my best to get it next year 💪. Soy milk nabe with prosciutto, potherb mustard and tofu, and satsuma-age from my uncle in the field 💖the best snack ever 😋! I'm shinsaku3 for the impressions of the sake alone 💕.

When I visit a brewery, I always end up buying keg drafts and sold by volume (🥰). The Houraisen Shiboritate I drank the other day was dry even though it was said to be sweet, so I bought the sweeter of the two varieties that were sold by volume, but I was a little nervous. and it is still a little spicy, but it's a refreshingly light and dry ✨👍. I paired it with sake meuniere and oden. It goes well with meals 🥰. Impression of the sake by itself is in charge of shinsaku3💕.

若竹に続き蓬莱泉もあけちゃいます🎉 自社栽培米100%！すごいです😍 キレのある甘口、辛すぎない辛口✨。蔵の女将さんから「甘口」と説明されましたがなるほど関谷酒造基準かも🧐美味しいです🥰ですが、アルコール度数もなかなかだし、キレと濃厚さでガツンときます‼️ イナダのお刺身、頂いたさつまいも🍠天ぷら、イカ焼き、豆乳豆腐、などなど濃いおつまみで迎え撃ちました👍 天気も良くドライブ日和、楽しい酒蔵巡りでした🥰 お酒単体でのインプレッションはshinsaku3担当です💕

I went to Aichi Shizuoka! Since we were there, we went to Sekiya Sake Brewery of Houraisen and a sake shop that sells a lot of Shizuoka's local sake: ‼️ We started with the sake shop owner's recommendation ✨. The sake brewed with Shizuoka yeast is not so much aromatic and fruity as it is a slow brew that brings out the flavor of the rice 🧐. It has a rich flavor that tastes like rice and even the flavor of soup stock. It has a very unique taste that is only possible because it bears the name of the master brewer 💖. We will now open a bottle of 🎊Kamigawa Taisetsu Shuzo It says "dry" on the bottle! But it's definitely more crisp and not as sweet as the Kitashizuku Jun Dai, but delicious ✨. The bitterness of the Ginpu is exquisite 🥰, not too sweet but still has umami. Of the three sake breweries 💕Midorigaoka, Tokachi, and Goryo, unfortunately Goryo is now gone. In other words, a phantom sake? Imadeya hanpukai😊It was my first bottle 🎉. The theme is transparency 🩷‼️ yeah it's not too spicy but has a nice sharpness 👍Today was kimchi nabe so the sharpness harmony is also good 🥰Kire-kei sake goes well with nabe. Another winter treat💕. There were various candidates for today's bottle, but I decided to go with Sanshiki-sama for my shuwa mood without worrying about whether or not it would go with the meal 🎉! This is my second bottle of Sanshiki this year ✌️ 😍This is delicious 💖! Summer schwa and winter schwa are two different things ✨Winter schwa❤️ feels so romantic 🥰. Sanshikisama has a subtle sweet aroma with no sourness. Yellowtail sashimi, grilled squid, fried sea bream chikuwa isobe, all are good and easy to eat while being shuwa. ‼️It goes well with both Japanese and Western food. ❣️ Sake impressions by itself are the responsibility of shinsaku3 💕.

This is the first brewery 🎉Ryuki: ㊗️ If it's your first time, you must have freshly squeezed new sake! So, it's a beautiful autumn day, so we had a lunchtime balcony party for the first time in a long time. ‼️ Nagareki's first squeezed sake is not too spicy and mild cemedine type 💖. Hohoho~, it's kind of a new face. ‼️ Today we are having lamb, beef, pork, and the rest of the Hana-Hiyo-Yoku to compare with each other 😍. The sweet and sour Hanahyangyoku is the complete opposite of the Ryuki. Both complement each other well, but the sweet sauce with the Huayouyoku and the dry sauce with the Ryuki seem to go well together 👍. I enjoy both of them in various ways and drink them from noon🥰. The Nouveau will be released on November 7: ‼️ I'll open it right away 🥰! It smells so good 💖and smells even better after one sip 😍and even richer with a meal ✨! I had a bottle of Koshi's Thunderbolt the other day and it was so delicious that I had high expectations for it! And it's even better than I expected ✨ More umami than sweetness. No bitterness or sourness 👍 but not heavy, not spicy, light and gentle. It's just as you would expect from Jun Dai 🥰. Today's dishes are oven-baked sardines with shiso leaves and cheese, marinated sea bream, and pasta with crab miso cream. When served with sake, not only the flavor of the crab miso, but also the hidden supporting characters, such as the aroma of the shiso leaves and the acidity of the marinade, become more pronounced 😍This is delicious. ‼️ It will surely accompany any meal 👍 Impressions of the sake by itself are in charge of shinsaku3💕.

Kouko is the talk of the town at Sake no Wa: ❤️ Hatsuzou ㊗️🎉so delicious ‼️ I've been curious about Kouko-san for a long time because of HinaHanaMama's delicious review and her comment "Kouko-san is modern💖" and when I went to make a reservation at Sakasui no Dawn, I found this one just in time to get it in a nouveau eve kind of way 🙌😍! Since it's called modern, we decided on Western food😍. It's a hamburger and shirasu pan visa ❣️ Wow 😍delicious 😍‼️ mouth watering, fresh and fruity, sharp without bitterness ✨Yes, Modern 💖. It's easy to drink and seems to be swishy, but it's 16 degrees. Its firmness is there👍 I'm also looking forward to the dawn of Sakasui 🥰. It's a lovely label 🦋The first of the 2025 guitars has arrived and I'll give it to you right away 🎉. It's my first time to this brewery, but I surely know their "Mugi Shochu Iichiko" ‼️ It's 14 degrees, but it's softly sweet with a unique alcohol taste! There is a slight spicy bitterness, but it has the strength to blow away the low-alcohol feeling 💖. When paired with a meal, the unique alcohol, spiciness, and bitterness of the Kona mysteriously blow away, and it becomes a round, round, round sake. It's a wonder. Am I just drunk? Today's dishes are pork shabu-shabu, simmered pumpkin & kakuni & mushrooms, and chilled tofu with baby sardines. ❤️ Yesterday was the last race of the season in which my husband participates as a hobby 🏁 We enjoyed it slowly while reflecting on this year together 👍. For impressions of the sake alone, shinsaku3 is in charge 💕.

It's Halloween🎃🥰! So, I'll open after HinaHanaMama~ ❤️ I made pumpkin stew, meatloaf, and shishito peppers that I got from my uncle in the field, stuffed them with cream cheese and miso paste and baked them👍. Pumpkins are sweet and really delicious. ❣️ Today's supermarket was full of scary cute pumpkins lol. And mildly sweet, mildly bitter, mildly sour, exciting and exciting MONSTER😍. It goes well with the sweetness of the pumpkin and exquisite with the shishito miso chee‼️ The charm of minced meat dishes is the juicy taste of the meat. The sourness of the MONSTER works wonders with the flavor of the meat👍. It was worth the effort 😭🙌! Impressions on the sake by itself are in charge of shinsaku3💕.

Wind Forest Sisters, finally a drinking contest: ❣️ My love for Kaze no Mori is growing😍And this one, born from my favorite Aizan, is highly anticipated💜. It's so delicious from the first sip 🥰! This, this, this, this is Aizan❤️ sweet aroma that goes into your nose and rich delicious bitterness that soaks into your throat! After 3 days from opening, Akitsuho has mellowed even more, and when comparing the two, Aizan has a richer flavor, while Akitsuho is smooth, well-balanced and transparent✨. Both are delicious ‼️ Today, we are having a pork shabu shabu, which is still a boom in our house, and bukkake soba with mekabu egg 👍to which we will add wasabi oil 😋. We compared the Kaze no Mori sisters and it was delicious and goes well with food. ❤️ I wonder if we can drink it again next year with fresh sake. ‼️ I want to drink it. ‼️ Sake impressions by itself are in charge of shinsaku3 💕

The cherished Wind Forest Sisters 🥰. I'm opening it up 🙌 Last year? The year before? When I drank the Wind Forest, I thought it was a bit classic and I didn't like it, but now I'm not so sure 😊. First of all, let's start with Akitsuho 💖. We were greeted with the tastes of autumn, Akitoho fish, kampachi sashimi, and crab miso chawanmushi (steamed egg custard with crab miso). Yeah👍😍delicious ‼️ Classic feeling? Where? Salty rice flavor 💖 also goes amazingly well with grilled Akitogi 💖‼️🙌 We'll compare the drinks later👍 Wind Forest, I like it again 🩷. Sake impressions by itself are the responsibility of shinsaku3💕.

I made crab cream croquettes ❗️ So I'm going to open ❗️ 🥂. Western style cooking, rich cream and crab, I consulted with my refrigerator and decided on 🧐Sogape-sama🥰. I also added cured ham and sake lees cream cheese to the menu and it was a very rich and thick dish, but I think it went well with the strong flavor, acidity and spiciness of Sogape-sama. I also think it goes great with the salted mackerel I added to the menu ‼️🥰 lol. Sogape-sama has a surprisingly western atmosphere, but it seems to go well with Japanese home cooking 🩷. I love Sogape-sama😊 Can we drink Sogape-sama next season?
