The aftertaste is dry with a moderate bitterness remaining after a while. When paired with a meal, the sweetness is stronger than the acidity. Orthodox? It is delicious in an orthodox way.

A winter-only sake at the beginning of summer...sweat The color is almost colorless and transparent. Viscosity is not so high. The aroma is melon-like ginjo aroma, and you can tell it's delicious even before you drink it. The taste is just as expected, with sweetness and umami coming together. The acidity is moderate, and it gives it the freshness and sharpness typical of a winter sake. The aftertaste is also good, with just the right amount of bitterness. Next year (this year?) I definitely want to repeat!

It can be enjoyed on its own rather than as a food sake. It does not have much power, so it may be overpowered by strong flavored food, and is best enjoyed with light Japanese food.

New sake, a bit late in the season... Near colorless, but with a slight yellowish tinge. Nama sake, 17 degrees Celsius, with a thickening effect. The aroma is more freshness of new sake than ginjo aroma. The taste is firm and full of rice flavor. The aftertaste is dry with a touch of alcohol, but the umami is still there. Very much to my liking.

A little late in the season hiyaoroshi Yellowish hue, more golden than yellowish green. The aroma is of rice, as is typical of junmai, and the alcohol is drier than expected. The taste is a refreshing push of rice flavor. It is not as dry as the dryness expected from the aroma, and there is a lingering aftertaste. Personally, I would have preferred a little more richness for hiyaoroshi, but I enjoyed the good balance and it was delicious!

Yellowish-greenish color, viscosity is light. Melon and slightly alcoholic aroma. It has a dryness that is more pronounced than the umami that is typical of junmai sake. The aftertaste is dry with a sense of alcohol rather than a lingering aftertaste. I found out that it is a sake that goes well with ayu fish, and it certainly seems to go well with light white meat.

Slightly thick type Sweet aroma of rice, typical of junmai sake Not much ginjo aroma due to the 70% rice polishing, but that's good. The taste is very delicious with the umami of rice. When cold, you can hardly feel the alcohol taste. When the temperature is slightly higher, the aftertaste is a little dry. I like it very much and would like to repeat it, but it is only available in summer...
