Tonight we warmed up a bottle of Koshu Umebayashi Yamahai Junmai Sake from the Sato Shuzo Brewery in Koshu-cho, Saitama Prefecture.
The spiciness stood out when it was slightly hot with a soft lactic acidity, but as time passed and it became lukewarm, the spiciness mellowed out and the sweetness came out, creating a good balance.
It is good to warm up sake when it gets cold.
I couldn't help but say, "I like my sake warmed lukewarm..." 🎵.
