Shinshu Secret Sake Hanpukai - 6th bottle Somewhat yogurt-like aroma. Umami combined with bitterness and almost no sourness. The bitterness lingers in the aftertaste. The lower the temperature, the better the sweetness and umami.

Very different from the Tsuchida I've been drinking. Without lees, it has the character of Shin Tsuchida. When mixed with lees, it has fresh acidity, umami and nigori bitterness. The mouthfeel is light and easy to drink for a Tsuchida.

Shinshu Secret Sake Hanpukai - 1st bottle Sake brewing rice is Kinmon Nishiki A fresh, robust, honey-like sweet aroma. Sweet to acidic, both a little strong. The mouthfeel is a bit heavy, which is typical of sake, but surprisingly refreshing. However, because the alcohol content is 16%, you can still feel the robustness after a while after drinking. Even though it is a draft, I could hardly taste any change in taste on the third day after opening the bottle.

Cospa is the best! It has a strong umami flavor with a rich mellow umakuchi taste, but it is surprisingly easy to drink and keeps you going! It's been a long time since I've had Kikuhime, but it's still good!
