It's been a while since I've had a gassy one. Aroma that somehow reminds me of yogurt Weak acidity, sweet and bitter. In the mouth, the light sweetness expands to a pleasant bitterness. The bitterness leads to a lingering aftertaste and gradually fades away. When the temperature rises a little, you can taste the umami. I prefer a little more sweetness, but it is very tasty!

The sweetness I imagined from Kinmon-nishiki is delicious, but it is not easy to drink, partly because of the 17% alcohol content. As the day goes by, the sweetness disappears, and after a week, it becomes only spiciness. It is better to drink it as soon as possible after opening the bottle.

Purchased at a certain liquor store in Toyama Prefecture, which is rich in aged sake. Basically the same impression as the unaged one I have had before.
