Local sake sent from my parents' house. My husband prepared it for me. I enjoy it with sashimi which my husband prepared. It has a sweet smell of koji. It is clear and colorless. It has a mild taste with a tangy stimulation on the tongue. The sweetness of the rice spreads. There is a slight pear-like sweetness mixed in. It is refreshing and leaves a gentle sweetness in the mouth. Umaai: ‼️ This is the first time I've had sake from Imari. I don't think you can get this in Tokyo.

Slightly effervescent and cloudy. Banana-like aroma. In the mouth, it has a dry, shwashy mouthfeel, with a sour taste that spreads, followed by the sweetness of the rice. The tongue is stimulated and the drink finishes without a hitch. Yum! It seems that they use a brewing method called jumizu-jikkuri, where 10 koku of rice is brewed with only 10 koku of water, whereas normally 12-13 koku of water is used for 10 koku of rice. It doesn't feel like it's thick because of the low water content. It is a sparkling and delicious sake. I will buy it again!

My local sake, just made this year, 100% Saga grown using sake rice produced by Saga University. It is clear and colorless, and has a mildly spicy taste. It has the sweetness of koji with a tangy aroma of alcohol. In the mouth, a soft sweetness spreads, with banana and pear-like flavors. There is a slight sourness and a dry aftertaste. It is a crisp drink, as if the mouth has been rinsed. Delicious. Even though it is drier than I prefer, it is a sake that makes me want to drink it again.
