十水特別純米酒発泡の十水

Slightly effervescent and cloudy. Banana-like aroma. In the mouth, it has a dry, shwashy mouthfeel, with a sour taste that spreads, followed by the sweetness of the rice. The tongue is stimulated and the drink finishes without a hitch. Yum!
It seems that they use a brewing method called jumizu-jikkuri, where 10 koku of rice is brewed with only 10 koku of water, whereas normally 12-13 koku of water is used for 10 koku of rice.
It doesn't feel like it's thick because of the low water content. It is a sparkling and delicious sake.
I will buy it again!
