It is a rich, umami-kuchi sake. It has a richness that is typical of unfiltered, unfiltered, raw sake, but you don't feel the heaviness of the raw sake so much, and the lingering aftertaste is not too heavy. It was so good that I bought a bottle and drank it at an izakaya in Toyama.

Tobiroki Junmai Daiginjo Namazume It has been a long time since I have had a bottle of Tobiroki, and I don't even remember when I last had one. It is the first time for me to drink Junmai Daiginjo, and the taste, umami, and acidity of Tobiroki's sake spread in a good balance in my mouth. The umami that lingers on the tongue after it goes down the throat and the clean, elegant sweetness that lingers in the aftertaste, I felt that this was a Daiginjo's skill. I usually do not drink much Daiginjo because I prefer to taste the individuality of each sake more directly and strongly, but I realized once again that it is good to drink Daiginjo once in a while.

Classic Sentori Mukunin I have been buying Sentori for the past few years because I often feel that Sentori is a stable and well-balanced tasty sake, and I finally decided to drink two kinds of Sentori (Modern Sentori/ Classic Sentori) that I bought at the end of last year. I drank the Classic Sentori first, and it was again very tasty and stable. The taste is well-balanced and easy to drink, which makes me drink more and more sake. Sentori is one of the sake that makes me think, "This sake is really delicious even after drinking many others.

Harushika Junmai Ginjo Namaishu Shiboribana Harushika has an image of being super dry, but the taste is softer than that. It has a softer taste than that. It has a strong flavor that makes you think it is a pure sake. The lingering sharpness is something that only Harushika can provide. It softens as it warms up, but the character of this sake seems to fade away. It is best served cold. It seems to go well with strong food.

drunken whale junmai ginjo ginrei akiagari It is a dry and refreshing sake, but the acidity and umami are amplified compared to other junmai ginjos. It is a dry, refreshing junmai ginjo, but the acidity and umami are amplified compared to other junmai ginjos. I tried heating it up, thinking that heating it up might take away some of the goodness, but lukewarm heating simply downgrades it, and heating it up to upper temperatures or higher was surprisingly good for spreading the acidity.
