This is a hiyaoroshi Yamahai Junmai from Tedorigawa, which was also purchased last year. The palate has a firm acidity and a soft umami flavor that is typical of Yamahai. The lingering aftertaste is mellowed by the acidity, but it finishes well. It is a recommended bottle for those who like Yamahai.

This is the first time for me to drink one of Tsuji-Zenbei's which I used to buy a lot in the past. The soft umami spreads slowly in the mouth, and the smoothness of the 17% alcohol content is unnoticeable. The soft base makes it a good match with Japanese food.

The first time I drank Bunka Jin, the fruity and firm acidity spread on the palate, leaving a slight whiff of spiciness and just the right amount of spiciness. I bought the hiyaoroshi of Banshu Issen, which I love drinking, as soon as it was released. It has a beautiful umami and acidity that is typical of Banshu Ikkyo, but the finish is gentle like hiyaoroshi, and the acidity in the aftertaste is pleasantly extended. The taste is stable and I would like to buy it again next year.

It is the same as Fudo's Hiyaoroshi, which is sometimes consumed as a draft sake. The taste is juicy and firm, as is typical of Fudo, but it also has a calm taste, as is typical of hiyaoroshi. Unlike the nama-shu, the taste does not decline even after about a week after opening the bottle.

Hououmida hiyaoroshi, which I often drink. Since I like hiyaoroshi, I buy a variety of hiyaoroshi at this time of year, but Hououmida is a stable taste. Unlike Haneya's usual nama-sake, hiyaoroshi has a much gentler spread of umami in the mouth. It is a matter of taste, but if you are looking for a more fruity and rich sake, junmai ginjo nama-zake is better, but hiyaoroshi is also good if you want a lighter taste with a mild umami.

My father bought this sake when he went to Toyama, and the sake shop recommended it to him. It is a mellow umami sake, with a rich umami flavor that spreads in the mouth with a hint of acidity typical of Yamahai sake. The aftertaste is lighter than expected, with a refreshing finish and a good sharpness.

It's a little sweeter than the traditional Yukichubai, but it mellows out when heated, so I haven't had it for a long time. I bought it a long time ago and drank it lukewarm. I buy Hououmida with high frequency, but this is the first time I bought Heki-ban. The taste in the mouth is sweet and delicious, as is typical of Hououmida, but it also has a spiciness and a strong flavor, as is typical of the original sake. I was surprised to find my favorite sake, Naekaya, on sale at a nearby chain liquor store, Yamaya, so I bought it. I have to go to Toyama regularly, and I buy and drink Naekaya sake quite often, so it is a sake I am familiar with. It is a sake that is not overpowered by strong-flavored food.

I bought a bottle of Atago no Matsu honjozo sake for my first time for everyday drinking. The Atago no Matsu honjozo is also a mild and clean sake with a good cost performance. Unlike the Junmai Ginjo, the Atago no Matsumatsu Honjozo is more mature and quiet than the Junmai Ginjo, making it perfect for everyday drinking, and it can be served at room temperature or warmed up.

Banshu Issen is one of my favorite brands. When you take a sip, you may feel the sweet and delicious taste that is typical of Banshu Ichiken at first, but the sweetness quickly fades away and the acidity and a little bit of spiciness spread quickly. Unlike the usual junmai ginjos and other dark mellow umamikuchi type wines, this one does not have a sweet taste that lives up to its name of "super-harsh. It goes well with less flavorful foods such as sashimi, but it is also good with strong flavored foods.

When you drink it, you will feel the rich flavor and voluptuous alcohol. A closer look reveals that it has an alcohol content of 20 degrees! I can see why it is so rich and heavy. It is better to be heated up, as the richness of the flavor will spread more smoothly. The alcohol content is high, so be careful how you drink it and how much you drink.
