Slight aroma, soft attack. The taste is mild and umami. It goes in smoothly and has a lingering aftertaste.
So, I put in seafood, which is sashimi, and put in Tensei. It is a familiar taste ✌️.
This is a local sake from Chigasaki.
A colleague at work raved about it, so I bought a bottle.
This is my favorite Aizan, and you can feel the flavor of the rice!
It's a calm and delicious sake because it's been heat-treated.

It is a sake of bliss, with a mellow and moderate aroma, a graceful hint of fragrance in the mouth, and a refined, smooth and clean taste that pursues the umami of the rice to the limit.
It is a "muddled sake" made with local rice and yeast collected on the premises. I bought it raw because it is a very limited edition.
As it was still fermenting, I opened it slowly and chilled it as per the instructions on opening the bottle.
I enjoyed the taste of the traditional sake while feeling the mumble of the rice.
I thought it would be sweeter, but there was hardly any sweetness at all, and it was an interesting sake where you could feel the flavor of the rice.
The label is unique and you can feel the story of the brewery.
