Mild aroma, sweetness and elegance! I had an image of white peaches, but if it is too cold, the bitterness in the aftertaste may become stronger and citrus-like nuances may appear. The acidity is relatively low, and the overall taste is clean, with a nice sweetness that does not linger on the palate, too good!

The aroma is faint and raisin-like. I think it's a raisin type, and when I take it in, I get a strong caramel taste, and the aroma that comes back is a pear nuance, like new sake (I don't know what it is, but it's something I often get in new sake).
The taste is sour or juicy.
The mid-palate has a nice caramel taste, and since it's been aged for a year, I'd like to try the freshly released version.

I heard that it's not allowed to take pictures of the menu, but only of the products (I didn't realize that until too late).
The freshness and strong acidity were impressive, and it went well with the citrus on the yam, so I bit into it and drank it.
This one is too good to be true, the flavor development is similar to Ryugetsu, but the aroma lasts longer than I expected, or the impression is that it's more draggy, I like Ryugetsu better.
Since it's the new year, I'll have a Jyushiyo 😆.
From the nose it's round and sweet!
Surprisingly, after the sweetness, I feel a caramel type bittersweetness, not much acidity but it's fresh and crisp!
Personally, I think I prefer the Honmaru, but it's really good!
