Memorandum. I went to a sake izakaya. There are too many kinds of sake, so I made my choice in the destination I want to visit now. First, Otsuki, Yamanashi Prefecture. Fuji, using melted snow water. It is soft to drink and has a strong flavor of rice. This water is called "Gozensui," which is a historic water that was chosen by Emperor Meiji as the water he would carry with him when he went to Kyoto. It seems to be good for something.

I pre-order Jusui every year at the end of the year. It seems to be brewed three times each year. This 2022/December one is the first of those. It is rich and soft with a spread of rice flavor and sweetness. The aftertaste is also fruity. The first batch seems to be just as it was made, and they do not adjust the flavor much. I personally like the taste this time better than the one from 2021/Dec. The one from 2021 /Dec. had a little habit in my mouth.... There are two more sales this winter. Two more times they seem to adjust the flavor somewhat. There will be a special sales event in February, as usual, and I will be there to buy two portions. Looking forward to it. 🤗

Long time no post. I will try my best to post again from now on. This is a collaboration of my favorite jusui and ripe whole plums. It is full of pulp and the aroma of plums is amazing. It is delicious. Drinking sake while watching the Hakone Ekiden, an annual event, is still fun. This year, I was on the edge of my seat and had a great time drinking.

It has become one of my favorite sake among all the sake I drank this year. The sake rice is Yumesansui. It has a very strong flavor and a nice fruity aroma. As its reputation suggests, it is thick rather than smooth. I tried it with smoked cheese and sweet soybeans because it was not too acidic and had a strong sweet taste. Delicious. I have a sweet tooth... I became quite a fan.

This is a record of my trip to Kyoto. We drank at the same restaurant as the previous article. The first one is Ki Junmai Daiginjo Domaine Ki. If you read the back label, you can tell the wonderful sake brewing. It is delicious with a slight, mild, fresh fruit aroma, soft mouthfeel, and elegant flavor. Next up is the Ki Special Junmai Sake. Refreshing and sweet aroma, the delicious flavor of rice spreads, and the citrus acidity gives a crisp feeling. Delicious. This concludes our trip to Kyoto. It was a happy trip with good sake every day. Next time, I think I will go to Nara to enjoy temples and shrines and sake.

This is a record of my trip to Kyoto. I drank at the restaurant mentioned in the previous article. The first one is Shinkame Junmai Namaishu. It is light and fresh, but has a rich and delicious rice flavor. Next is Shinkame Junmai Sake. It has a rich rice flavor and a slight sweetness.

This is a record of my trip to Kyoto. Whenever I visit Kyoto, I always go to this restaurant. You can enjoy a little ryotei cuisine and good sake. The food changes every time. The sake also changes each time to match the food. The first one is Kyoto Eikun's Ichigin. It is a fruity and gorgeous ginjo sake. It has a great aroma. It changed my impression of ginjo-shu. It was a valuable experience for me because I usually don't get to drink such expensive sake. What I like about this restaurant is that everything is served in Riedel glasses. They use different types for junmai and ginjo-shu depending on the sake. Thank you for the great food and sake every time. I will go back again.

This is a memory of my trip to Kyoto. I visited Matsui Sake Brewery in Kyoto. I could not visit the brewery without a reservation, but I had a drink at the counter. The brewery staff was very kind and engaged in polite conversation with us. Thank you very much. We had four kinds of sake, all of which were delicious and had the flavor of rice. I especially like Jinzo Aizan and Jinzo Ruri. Before leaving on the Shinkansen, I happened to talk with a sake brewer who was at Isetan Kyoto for an event, and he told me that Aizan is only available at the brewery. They don't make it every year, and this year they bottled it on Tanabata. It was a precious cup. It was a record of my trip. I will go back again.

This is a record of my trip to Kyoto. This is a place where you can drink Sake with Kiyomizuyaki. The first one is a 2013 vintage of Kinshi-Masamune. To enjoy the amber color, we dared to use a transparent glass designed by a Kyoto artist instead of Kiyomizuyaki. The design of the glass is very nice. It tastes like a vintage sake, with a full flavor and moderate bitterness. The second is Kiyomizuyaki. The chic and simple design is very nice. The rice used for the sake is Kyo-no-Kiraki. It has a refreshing taste. There is a garden inside the store. It has a garden inside the shop, which is very Kyoto-like.

Tokushima Prefecture, first landed in Shikoku with Miyoshikiku. The aroma is super fruity. Even when you drink it, it is super fruity. To me, it was very habit-forming and unique. However, it is delicious in its own way. It tastes addictive.

It is aged for 6 months. It is my favorite sake. It seems to be a winter-only sake, and this year is my fifth bottle. It seems to be brewed three times, three different ways, and I drank three different kinds right after they were bottled during the winter and enjoyed the differences. In addition to that, on the brewer's recommendation, I aged tank 812 for 6 months by myself and enjoyed one more bottle in July. Recently, I happened to find the aged Tank No. 811 in a store and bought it immediately. It is still delicious. I am looking forward to another bottle at the end of this year.

The sake rice is Yamada-Nishiki. It has a full, sweet taste with a crisp finish. Kyoto, Nara, and Shiga are the three sets of Kansai trips. It is a trip to visit temples, shrines, and Buddhist temples. With sake, I chose Shiga, just like Kyoto last time, to get the travel feeling. Now I can't find any Nara sake around me. I don't know what to do. I can't wait to go to Kyoto.

The sake rice is Kyo-no-Kiraki. It is refreshing with moderate acidity. You can also taste the umami of the rice. I like Kyoto very much. I have a bottle of Shotoku that I bought in Kyoto in June, and I want to recreate at home the marriage of sake and Japanese sweets that I experienced for the first time in Kyoto in June. I wonder if it is a little trendy in Kyoto. I have a sweet tooth, so it doesn't feel strange. The Japanese sweets are not Kyoto, but Kintsuba from Asakusa and Monaka from Kanazawa Kaga Clan. Personally, I recommend the sweet and light red bean paste, which is easy to pair with sake. I felt a little bit of Kyoto. But I still feel like going to Kyoto.

This sake is perfect for summer, refreshing and easy to drink. It was right after the bottle was opened. The customer next to me happened to order one, and then the one next to him, so I ordered one too. Unexpectedly, I ended up with one more glass. It was the right decision.

It is refreshing and perfect for hot summer. The sake rice is Gohyakumangoku, which I like. The other day, I went to Nikko, but due to the train, I could not buy sake back home. In my quest to conquer the whole country, I chose sake from Tochigi Prefecture with a vengeance. I think I will go to Nikko this winter with a vengeance.

I tried a sake from Shimane Prefecture on a friend's recommendation. I usually only drink sake from certain prefectures and breweries, so it was quite an adventure. There happened to be No. 7 and No. 9 with different yeasts, and we compared them. I can't put the difference into words, but I like Gohyakumangoku, so I like them both.
